Clear the tables as fast as you can. Keep a comfortable temperature. Play appropriate music, not just “good” music. Always have music playing, always. Buy flowers for a display. Clean your coffee machines. Steep your cups in detergent once a week. Deep clean the café once a month. Have nice drinking water available.”
