If someone needs to change from the Standard American Diet, then this may be a good choice for them to introduce more fruits and vegetables in a variety of meals/dishes, this would be a good book to get started or even to get ideas. For me though, too many dishes include dairy and/or sugars, or alcohols.
I love Taste of Home and I love using fresh veggies in cooking but I just couldn’t find anything in here that I liked. I’ve had this for years but I’m getting rid of it because I never use it.
This is my favorite type of cookbook - it is full of photos. Beginning with produce handling and buying fresh guidelines, progressing to a produce reference section, and concluding with over 300 recipes. The reference section contains a wealth of information for each category of produce alphabetically from artichokes and asparagus to strawberries and watermelon. The chapter headings are: Apples, Asparagus, Beans, Berries, Broccoli & Cauliflower, Cabbage, Carrots, Corn, Greens, Potatoes, Rhubarb, Squash, Tomatoes, Cornucopia. Much information is packed into this handy, 256-page, soft-cover book.
One word of caution. While there are certainly some good healthy recipes, there are also those that are at the opposite end of the health scales. For instance, sweet potatoes: Sweet Potato Salad vs Fried Sweet Potato Pies. By the way, both recipes are yummy.
Recommended for all, and especially, cookbook collectors like me.
This cookbook is organized by vegetable, and it has a lot of great recipes that are relatively simple and fast but taste like you put a lot of effort into them. This is a great cookbook for someone who has tons of extra veggies from the farmer's market or their garden and is not sure what else to make with them. The Tomato-Dill Soup recipe alone is sooooo good. I have made it twice and I crave more!
