Authors Andrew Schloss and Ken Bookman present 100 wonderful pasta sauces that are prepared and finished in the time it takes to boil the water and cook the pasta. In fact, many of these recipes are so easy, the sauce is finished in just 5 or 10 minutes, giving you time to chop up a salad and set the table, too. How is this possible? Using the right ingredients and techniques, as the authors explain, these recipes are easy enough for even beginner cooks to master. Tips include using fresh herbs to impart flavor quickly and having blocks of cheese like Parmesan and Romano to add a delicious finishing touch without extra cooking. Vegetables such as spinach and broccoli are cooked in the same pot of boiling water as the pasta, saving time and effort. If the perennial question is "What's for dinner?" and if "pasta" is always the perfect answer, then recipes like Dill and Potato Sauce, Sausage in White Clam Sauce, Lemon Scallop Sauce, and Pecorino Spinach Sauce will help you make your point deliciously. And best of all, with While the Pasta Cooks, you'll have dinner on the table before anyone has a chance to ask that other dinnertime question, "Is it ready yet?"
Andrew Schloss is a restaurateur; the author of 12 cookbooks; a writer whose articles have appeared in the Philadelphia Inquirer, The Washington Post, the San Francisco Chronicle, the Chicago Tribune, Bon Appetit and Family Circle; and president of product development company Culinary Generations, Inc. This cookbook lacks some of the shiny features of others (no pictures, for example) but it makes up for this in its inexpensiveness and in being simply chock-full of more than a hundred different pasta recipes, many of which are excellent, none of which are overly complicated to make. It is ideal for someone just learning how to do more sophisticated recipes with pasta and helps to show you a lot of the options you have for cooking with pasta. I recommend it for anyone looking to find some new pasta options.
Well, didn't read this book in the normal sense. But it is a great book with quick simple sauces and tosses for pasta. We loved everyone of the half-dozen or so recipes we have made from this book.
