Each recipe for these seemingly complex vegetable dishes comes complete with an illustrated shopping list and step-by-step photographs that mimic the flow of a cooking video to help even the novice create such masterpieces as vegetable couscous. 40,000 first printing.
A wonderful series of cookbooks is the "Perfect" series by Ann Willan. The recipes are sophisticated and contain tips that took me years to discover, such as pressing the dough above the edges of a tart pan before blind baking. Every cooking step has a full color photo. These books (including this one), while small, are often better than large volumes put out by famous cooking schools.
