This small book is a quarter century old but focussed on key recipes from France 🇫🇷. Every recipe is a gem. From the classic Pepper steak to the Vegan “Artichokes Barigoule” (sun chicken stock with vegetable stock). There is a detailed chapter on making French bread 🥖 and it works.

My favourite was the “Steak au Poivre” with the real French Fries, which - by following the recipe exactly - gives a superior result! 😳 It was somewhat humbling to see a few simple techniques produce the best steak I have had in years.

After making the pear tart I thought I had died and gone to heaven.

I still cannot make Pissaladière to save my life and I love it.

Not counting the three basic Stock, “Pâte Brisée (basic French pastry dough), and dressing recipes, this book has 41 key recipes.

I have cooked many recipes out of this book and intend to cook them all. The recipes are excellently written and I have been happy with the results.
