I saw this book at the library when I went to pick up a book that I had requested. This happens a bit. I could use some more coconut recipes I thought to myself. I'm getting bored with my standard curries and frozen desserts...

The first 88 pages are devoted to the benefits of coconut. If you've been listening to all the current studies and marketing efforts this will be mostly repeat. It is very easy to read.

I marked it up from a three star to a four star because I did get a lot of recipes and ideas from this book. Even though I have adopted a Paleo lifestyle and avoid nightshades due to a food sensitivity to them. Coconut-Ginger Mussels with Bacon and Coconut-Garlic Chicken Bites may be the first recipes I try. I am a little hesitant to try Kalio Hati (Malaysian Liver in Coconut Milk). I sure enjoy Chestnut Flour coated Liver Fried in Bacon Fat. Why mess with a yummy standard ;-) Spare Ribs with Honey Coconut Glaze sure sounds good, especially since I miss spareribs with the nightshade avoidance! And finishing with Key Lime Coconut Bars - no cane sugar, no wheat flour.

There is a chapter for those who adopted a raw diet and another chapter for those who adopted a vegan diet.

This book wasn't that useful - I found more info on coconut and it's uses/benefits by doing a quick google search.....
