Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

I received this Hallmark book as a gift from my aunt, uncle, and cousin. It's a collection of short vignettes (2-3 pages) illustrating lessons learned by the various writers. It's a quick read and a good reminder of some timeless truths.
I was struck by this quote from George Eliot: "It's never too late to be what you might have been."
This lovely gift book is a blessing at any time. There are 50 statements and then a passage giving an example of that "truth." It is not religious or spiritual, just good advice. For example, truth number 31 is "your contribution is more valuable than you might think." No big deal, we all know this but a short essay gives an example of this. It is a book to pick up when you are angry, hurt, sad, whatever and just read a short passage to make you feel better. The world is not as bad after you read one of these short stories. The next time I am in the hospital, I want this book with me - it will cheer me and remind me of the truth in the world. There are 50 different authors and the book is published by Rodale Press.
