I've called this book Virtually Vegan because that's what I am - virtually a vegan. I describe myself as a vegetarian because I do occasionally eat (free-range) eggs and (vegetarian) cheese, but in practice most of the food I eat at home is vegan. I have not eaten meat or fish for nearly 30 years, and so I have had plenty of time to refine and perfect the recipes you see here.

From fragrant chickpea and mushroom curry to Italian favourites such as pea and asparagus risotto, these recipes are influenced by dishes from all over the world.

They have not been compiled especially for this book and tested in a specialist kitchen somewhere. The only testing they have undergone is in my kitchen... every night for the last 28 years!

With a different easy recipe for nearly every day of the month, this book is ideal for anyone wanting to make the transition towards a vegan way of life.
