The OMELETS IN A BAG is sheer genius. I wondered how they would cook the eggs in a plastic bag, and they boil them for 13 to 15 minutes. Very clever. PICNIC PINEAPPLE GELATIN is another clever, easy treat. After draining a large can of pineapple slices, pour dissolved gelatin into the can and let it set. Pour the whole mixture out onto a cutting board, slice it along the pineapple slices, and place the slices on lettuce leaves.
There are even a few no-bake cookie-type desserts and cheesecake. Near the end, there are some ideas for frying fish and veggie dressing (made from farmer's market offerings). There is no nutritional information or photos. This is more of a booklet, with only about 20 recipes.
This was a very good recipe book how ever I do wish that the author had done more to make it more interesting. I look forward to reading more of this authors work.
We have tried a few of the recipes and they have been pretty good. Many involve more work and more ingredients than I'm willing to give while camping. I'm just not going to make cookies, even if I do have an oven, while I am out enjoying nature. Whatever happened to hotdogs cooked on a stick?
The biggest drawback to the Kindle edition--no table of contents. Having to go page by page in a cookbook, to find what you're looking for, is obnoxious.
In addition, the formatting for the Kindle edition needs work.
this small cookbook relied heavily on canned soups and other convenience foods, which i suppose is understandable for rv cooking, but many recipes really weren't my cup of tea. using 3-4 canned soups for a chowder seems rather excessive, and since i like to cook inexpensively, i make such things from scratch.
