I never met a cookie that I didn’t like. Especially a stuffed one. Prior to reading this cookbook, I had never heard of Heather Mubarak. The only thing that I knew was that I loved the cover. But when I pulled back that cover and actually began reading and reviewing this cookbook, I realized just how much I was missing because the inside is even better. Even though the ARC I received was an advanced uncorrected proof, I was to tell the publishers just one thing: Don’t. Change. Anything.
First of all, let me just get this out of the way: How can you not like an author that has a, “…cookie-a-day philosophy…”????? And all of the author’s recipes reveal just how much Mubarak loves cookies. But this book is more than just a collection of ‘OMG’ recipes. Mubarak provides measurements for both the English and Metric systems and baking temperatures are both in Fahrenheit and Celsius. This may not seem important to some people, but in doing so, the author has made this book truly usable for people both inside and outside the USA—not just professional chefs, but home cooks as well.
Mubarak doesn’t skimp on anything. The directions she wrote are detailed and even include directions in the sidebar. For example, she tells people how to heat treat flour (and why you should do it) when making raw cookie dough.
An entire section on the fillings alone was enough to make my mouth water. As if recipes for Oreos, Nutter Butters, Key Lime Pie Sandwich Cookies, and Lavender Lemon Shortbread with Meyer Lemon Curd wasn’t good enough, the author included a recipe for copycat Milanos! But in addition to the sweeter recipes, she also included more savory companions. For example, Everything Bagel Crackers with Chive Cream Cheese. Mubarak even included various ice cream recipes.
I stand by what I told the publishers earlier that they shouldn’t change anything in this book. And I mean it. The only way that it could possibly get any better is if they included embedded video in the ebook just so that I could drool more.
This book is so well-put together—with original recipes, wonderful directions, and fantastic, mouth-watering photographs. I don’t often buy cookbooks. But I most definitely will purchase a copy of this. I recommend this cookie cookbook to anyone and everyone.
So many different cookies to try! I didn't know this many versions of stuffed cookies existed.
Let's talk about the layout of the book first. I really liked that the filling details of the common fillings were at the front. Many of the same ones are used, so that helps a lot. Each section has a theme that the cookies fit, like chocolate. That really helps in finding the type you would like to make.
Since I am behind on holiday baking, some of these recipes will do the trick, especially the peppermint ones!

Wow does this cookbook have it all: classic cookies, copycat cookies, savory cookies, chocolate, lemon, etc. and the best part? They are all filled with delicious buttercream frosting, chocolate ganache, and MORE. Every recipe has a beautiful photo accompanying the clear instructions with delicious recipes. The beginning includes information fir new bakers such as essential baking equipment, supplies, and ingredients and some baking tips.
I personally cannot wait to make the oatmeal cream pies with brown sugar buttercream and copycat nutter butters. If you can’t find something that will cause you to make a batch of cookies then I’m not sure what you could possibly want! Warning: you’ll want to lick the screen several times with the beautiful photos!
I would definitely by a copy of this book for myself it any baker in my life.

Stuffed is a wonderful cookbook about stuffed and/or sandwich cookies of all types. The pictures in the book looked simply mouthwatering. I will say for me who does not profess to be much of a baker I am a bit intimated by the recipes, but I think someone with a bit of skill would love this book. I loved the entertaining aspect of the book. This would make a lovely gift for someone and I would love for someone to make me those Boozy Irish Cream macarons. 4/5 for me. If you're in need of a great cookie recipe book, look no further! This cookbook has it all, with mix-and-match cookie sandwiches and an entire chapter devoted to fillings and other components. The photography is beautiful and draws the reader in, making them want to try as many of these delicious-looking recipes as possible.

STUFFED: THE SANDWICH COOKIE BOOK by Heather Mubarak
The combinations of cookies and fillings are endless with this fantastic book! We've made the Copycat Nutter Butters, we made them as round cookies, we are not particular as to the shape of the cookies. More than one-half of the filling was not used in the recipe, so we are thinking up ways to use the leftover filling, freeze it, roll it into small balls, and dip it into a chocolate coating. Yum!
The book is appropriate for anyone who likes to bake, wants to bake or to drool over delicious-looking artwork. The next cookie recipe that we will try out will be the Copycat Oreos.
I liked the fact that nearly every recipe has a full-color photo of what the cookies should look like. Several of the recipes seem to be more difficult than what the average cook will want to attempt. But, it is always handy to have the book for reference, if you did want to attempt them.
Stuffed: The Sandwich Cookie Book by Heather Mubarak is loaded with cookie recipes that can be stuffed from the sweet to the savory.
The first thing you will notice about this book is the beautiful pictures of all the cookies. That alone, makes you want to make every cookie in the book. The author has sections on Thirteen Tools for Sandwich Cookie Success, Pantry Must Have for Cookie Baking, and Tips and Tricks. The recipes have a blurb about the recipe, amount it makes, ingredients, making the cookies, and assembling the cookies when indicated. The author also includes some mixes and matches with different recipes as well as the occasional notes.

I couldn’t wait to pick one of the recipes to make, and I chose Black Forest Ice Cream Sandwiches. The directions were simple and typical for most cookie recipes. The only issue I had was keeping my dough cold enough to make the cookie sandwiches. The author did indicate that you have to move fast to keep the dough from softening. The ice cream sandwich cookies was delicious and left me wanting to make them all in the book.
This book is for all cookie lovers. You will not be disappointed with the assortment of cookie recipes and the fillings they are stuffed with.

This is a fun book!
The pictures are beautiful and there's a variety of recipes. The book is organized by sandwich cookie type - frozen, cocktail flavored, standard, etc. The book includes recipes for MANY kinds of cookies as well as fillings to help complete your cookie sandwich. The Neapolitan cookie and pseudo oreo really stood out to me. The book has great recipes to mix and match to make different cookie and filling combinations, and most of the ingredients are easy to find and the recipes aren't super complicated. This is the kind of book where I know even if what I don't make looks as good as the picture, it will still taste delicious.
This is a great find for those with a sweet tooth.

I’d say that everyone loves a good cookie. Home baked cookies are such a treat because it feels special when someone has baked just for you (or, at least, this is how I hope people feel when I give them a box full of cookies!). I love baking and, cookies are the perfect thing to share. Unlike a cake, you can gift cookies for no reason at all and, I appreciate the fact that they can be divided up so that many people can enjoy them. Thinking about the wide world of cookie baking, I was really excited to receive a copy of Heather Mubarak’s Stuffed: The Sandwich Cookie Book in the mail because I appreciate that while she gives recipes as a cookie and filling pairing, she’s organized the book so that home bakers have the freedom to mix-and-match recipes too!
Everything home bakers need to know is “sandwiched” into 7 chapters: 1) Oldies But Goodies, 2) For the Love of Chocolate, 3) The Cool Cookie, 4) Tart & Tangy, 5) Cookies with a Kick, 6) Cocktail Cookies, and 7) The Fillings. Mubarak spends the opening of the book giving bakers helpful information on ingredients along with tips and tricks to ensure our success. I found it was easy to get baking the recipes because they relied on equipment and ingredients that I already had – baking sheets, a kitchen scale, and cookie scoops are the essentials. She uses a stand mixer for most of her recipes, but I think a hand mixer could work too. Using a stand mixer is helpful when you need to whip/mix something for a long time – for example, when I was whipping the Vanilla Bean Filling, the recipe instructs us to whip it for 6 minutes. I appreciated being able to let the stand mixer do that job! The recipes yield anywhere from 12-24 cookies, and I found the filling recipes are generous so that I never was left without being able to fill all the cookies. I noticed that many of the recipes required the dough and/or the filling to chill first, so it’s always a good idea to read through the recipes beforehand.
Since I am awfully fond of my walking buddies, the first recipe I baked to share was the one for Gourmet Golden Oreos. I chose this one because I could almost get a couple dozen cookies from the recipe (enough to share with everyone!) and I was curious to see how Mubarak would get the filling to look Oreo-like (the pancake-flat filling of Oreos appeals to me in a big way). As I got baking, I learned that the filling was first chilled, then rolled out between two pieces of parchment and frozen until firm. Once firm, a 2” round cutter is used to cutout the discs of filling! When sandwiched between buttery, golden cookies, these really do look like a golden Oreo! They were also a big hit with my pals too!
Coffee and chocolate are such a classic pairing – with the deep, richness of the coffee adding more chocolatey flavour to the chocolate, which is why Mubarak’s Coffee Lover’s Cookies are so delicious! My dear friend adores any type of brownie cookie, so when I saw the recipe for this sandwich cookie version, I knew I would bake her a batch. This cookie recipe has been adapted from an Edd Kimber recipe, with a good amount of espresso powder being added to the dough. As with any brownie cookie, these are lush and fudgy and when sandwiched with buttercream they are a dream. While I intended to make the Espresso Buttercream, I worried that it would be too much coffee for my daughter (who was also keen to try these), so I used a caramel emulsion to flavour the filling (coffee, chocolate, and caramel is an excellent combination).
One of my favourite cookies from the book are the Carrot Cake Cookies w/ Brown Butter Cream Cheese Frosting. Spiced and carrot-y, these cookies appealed to everyone because there were no divisive add-ins like raisins or crushed pineapple – just shredded carrot in all it’s glory! I also loved the texture of the cookies – softer and cakier than a regular cookie, these reminded me of a Whoopie Pie. And I loved the brown butter flavoured cream cheese frosting too. These cookies – along with all sandwich cookies imho – bring that extra level of satisfaction with them because you get to eat not one, but *two* cookies AND you get the benefit of enjoying buttercream without having it with a slice of cake.
If you’re looking for some immediate gratification, then I would recommend baking the recipe for Funfetti Cookies w/ Cake Batter Buttercream because the cookie dough can be mixed up and baked without any chilling. My daughter really loved these cookies – whether it was the bright sprinkles in the cookie or the lovely pink buttercream, these sandwich cookies really called to her! I think they’re a fun cookie that is perfect for any special occasion or celebration too.
Stuffed is a wonderful cookie book full of recipes and inspiration for every craving, occasion, and season. Mubarak also gives home bakers a wide variety of types of sandwich cookies – including macarons, Whoopie Pies, and ice cream sammies to mention just a few. As I have found, sandwich cookies are delicious, even more delightful when shared with friends and family! And, I have already started to think about which cookies I’ll add to my holiday cookie boxes this year – the recipe for Gingerbread Cookies w/ Pumpkin Spice Buttercream are at the top of the list.

Stuffed: The Sandwich Cookie Book is a well written and organized cookbook with wonderful photographs of the featured cookies. I thought the introductory information about the ingredients and equipment was well done. Too often we more experienced bakers skip over this (sometimes myself included) but I thought the insights and information included here would be gook for bakers of all skill levels. I love that the author includes information about adjusting these recipes to be gluten free, and how to achieve the best possible bake. I also like that metric and imperial measurements are included- so regardless of a baker's personal preference there is no need to mess around with conversions. I liked the wide variety of cookies, and I liked the author's voice. I found the little introductions to be interesting and entertaining. This is exactly the book I needed right before Christmas baking started- to look over grand ideas only to end up making my tried and true recipes. There are several recipes here that I will attempt, and several more that I will use flavor combinations or technique from to help improve my baking results. In fact, this just might be a baking weekend so I can test some of these out. I just do not have the freezer space for all of the ones I want to make.
Stuffed is a wonderful collection of tutorials and 65 mix-and-match recipes for sandwich cookies by Heather Mubarak. Due out 4th April 2023 from Chronicle Books, it's a comprehensive 272 pages and will be available in hardcover and ebook formats.
The concept is quite simple. There are lots (and LOTS) of cookie recipes as well as mix and match fillings to turn them into sandwich cookies. There are basic classic recipes (chocolate chip, oatmeal, peanut butter) as well as gorgeous up-to-the-minute instagram-perfect recipes (lavender shortbread with meyer lemon curd, rosemary pine nut sablés with whipped goat cheese and more).
The recipes include an introduction, ingredients in a bullet list sidebar, and step-by-step preparation and cooking instructions. Ingredient measurements are given in imperial (American) units with metric in parentheses (yay!). The author goes into a great deal of detail with specific ingredients, especially different types of flour and sugar, some of which might require a specialist grocery with a good selection of baking goods. Nutritional information is not included, thank goodness.
The photography is stellar, clear and in color.

If you like cookies, and especially sandwich cookies (who in their right mind doesn’t), you’ll immediately want to pick up Heather Mubarak’s Stuffed: The Sandwich Cookie Book. This cookbook is excellent and has recipes for regular sandwich cookies like homemade Oreos, as well as whoopie pies, macarons of many flavors, and dozens of ice cream sandwich variations.
The recipes are easy to follow, and are written in the traditional manner so it’s easy for anyone, beginning to advanced bakers to make picture-perfect stuffed cookies. Not only are there dozens of actual cookies waiting to be stuffed, but there are several (I mean lots) of mouthwatering fillings consisting of salted caramel type fillings, buttercream fillings in varied flavors, different flavors of ganache, lemon curd, mascarpone and cream cheese fillings, homemade strawberry jam, and even homemade ice cream. The possibilities for filled cookies and variations with the cookies and fillings are limited only to the cook’s imagination.
Every cookie recipe is paired with a beautiful photograph, and just perusing this cookbook will invoke a desire to make a dozen or so different kinds. There are cookies for any occasion and taste.
All told, this cookbook is a fun one to add to any cookbook collection. It’s both fun to read and fun to cook from. It is well-written, and is highly recommended.

A perfect cookbook for filled cookie lovers who find mixing and matching options exciting! Stuffed is organized unlike most traditional cookie cookbooks where you are presented with a whole cookie to make in one recipe. Here, you pick a cookie from one part of the book (divided by type), then pick a filling from a section dedicated to all the choices to sandwich them together. You’ll be delighted by all the variety in both sections with a range of difficulty from simple stir and drop cookies all the way to macarons. There are also unusual savory “cookies”, like parmesan polenta crackers with chive cream cheese, that would be lovely to accompany a wine tasting.
Although each cookie recipe has a suggested filling (and an enticing picture of the combo to boot!), you’ll be tempted to broaden your cookie horizons and try some of the endless possibilities. I know I’m looking forward to making Wannabe Brownie Cookies with Cake Batter Buttercream and Chewy Chocolate Ginger Cookies with Salted Caramel Buttercream. Whatever your tastes, there’s something for you in this beautiful and easy to use cookbook.
Stuffed - The Sandwich Cookie Book by Heather Mubarak opens with the dedication to her mom whom she credits with teaching her “that home is where the cookies are” and what a selection of cookies these are! The photos alone are so tantalizing that it’s almost impossible to browse through this book without breaking out the baking supplies and heating up the oven. There is something for everyone in this book, from the oldies but goodies through chocolate and cookies with a kick to the cocktail cookies. I have to admit to being particularly drawn to the cocktail cookies as these are something not often seen in a cookie book. Parmesan Pizelles with Whipped Herb Cream Cheese and the Lemon Thyme Shortbread with Whipped Mascarpone Filling are very straight-forward and will definitely be in my rotation from now on. (I reviewed an advance reader copy and all opinions are my own.). I can’t wait to work my way through every cookie in this book.

Stuffed was a delightful cookbook to read and perusing the photos made my mouth water. There are so many different recipes and they even include variations - this is the ultimate mix and match cookie experience. It's hard to know which recipe to start with, but I have a feeling I'm going to be making some of the fillings just to eat by themselves! I have marked several sandwich cookie recipes to try at our next cookie party and I'm definitely going to be mentioning Heather Mubarak's book to everyone. This book is great for anyone who enjoys baking cookies, but also for anyone who loves to eat them since there's something for everyone. I appreciate NetGalley allowing me to download this book. There are recipes for Chocolate Chip Cookies, Hot Fudge Sundae Macarons, Spiced Chocolate Cookies with Dulce de Leche and so many more.
There are helpful beginning sections to get bakers set up. The recipes that follow are clear and the pictures will make you hungry.
This is a scrumptious title. It will surely find its audience!

It’s only been in recent years that I’ve started reading cookbooks cover to cover - I missed out for so long, and I’m so glad I finally enjoy them properly.
This cookbook is a delight - so gorgeously presented, creative, and fun. It’s rare that I want to make almost everything in a cookbook, but I feel that way about this one. It was pointless to earmark pages because I want to work my way through every single one of the recipes. There are so many cool ideas that sound delicious and are also accessible (nothing overly complex or unnecessarily complicated). I also love how there are some unique savory options that I can’t wait to try.
This will be a cookbook I suspect I’ll never get rid of and will refer to often. Highly recommend.
I love any form of Cookie! If you know me, then you know this to be true.
Stuffed is to cookies as caviar is to bellinis - the perfect partner.
Filled to the brim with cookies to tease, tempt and tantalise, it is my go-to when the need for a surgery kick is calling my name.
I will note one negative (only minor): They are very sweet - by nature, a cookie is sweet, sure. However, there is no complexity to the development. There is no balance to bring about a counter to vapid sweetness. I don't hate this (and the book is still five stars), but the Brit in me needs that undertone of something other than sugar.
Other than that, and as my first 2024 review, this book is a personal must and a top recommendation. If you like cookies - get this book!
This book is beautiful. The photographs make me want to devour all the cookies (although they really had me at the descriptions). What I particularly enjoyed about this was the converted measurements, having ingredients measured out in both US and metric units, making it easier for anyone to make the recipes. There are very useful guides in the front with lists of essential pantry items and tools. I'm definitely trying the Peanut Butter cookies with Peanut Butter Mousse & Chocolate Ganache first. There are also wonderful savory recipes in the back for cocktail parties. Highly recommended for those entertaining and wanting a little something different to serve. This is one that I will purchase for my own collection.

I bake a lot of cookies. Like, a lot a lot. I'm always looking for new cookie recipes and cookbooks. This one is a little different because it's cookie sandwiches of various kinds. It appealed to me because I don't really see solo cookbooks about cookie sandwiches and I was intrigued! The recipes seemed pretty straightforward and intriguing but I was particularly interested in the Boozy Irish Cream macarons and the ice cream cookie sandwich and "savory" cookie sections. I will definitely be buying my own copy of this to experiment with!

A must have book for cookie bakers! This book is stuffed (haha) with great recipes, a beautiful picture for each cookie, and step by step instructions for each recipe. The front of the book has a great listing of pantry staples, and tools to make your baking life easier.
Each recipe is listed in US and metric units, making it easy for anyone to use these recipes.
The recipes run the gambit from your traditional Chocolate Chip Cookie, to savory Lemon Thyme Shortbread.
This book will be a fantastic addition to anyone's bookshelf, and I plan on buying a hard copy myself once it's published.

Thank you NetGalley for the opportunity to read and review the ARC for "Stuffed." First off, Wow! What a beautiful cookbook! The best way to impress me is to have images that grab your attention. Baking is a passion of mine, and I want to try recipes when there are pictures of the bakes. I love that there are classic sandwich cookie recipes like Milanos, macarons, and even some unique ones like Brown Butter Snickerdoodle with Chai Spice Buttercream. The organization of chapters is also exceptional with oldies, chocolate, fillings etc. The aesthetic and layout definitely makes me want to purchase this book.
I am drooling over the beautiful pictures in this cookbook! Stuffed is full of sandwich cookie recipes in many different flavors. The author gives suggestions on which cookies and fillings will mix and match well together. There are so many recipes that I am dying to try, and one immediately got added to my list of Christmas cookies I’ll be making this weekend.
I also appreciated the opening sections where the author discusses the different ingredients and some important cooking tips.
