I bought this cookbook because I am always constantly looking at Instagram and trying out recipes. I found Hunter's egg dish about a month ago and I have made it at least 3 times a week. It's super easy and it allows me to set it all up in about 5 minutes in the most twee pan ever. And then I leave it on at 365 for 25 minutes so I have yummy eggs with spinach and feta cheese. I have also changed up that recipe for egg whites and it works perfectly! When I saw she had a cookbook out, I bought it quickly and it arrived on Saturday.
What I love about this cookbook is that she takes compact cooking and really focuses on us not having to take out a huge pan, pot, etc. to make really delicious and healthy food. I am just about over cooks on the gram with blenders, immersion tools, etc. I am not doing all of that. Give me something I can cook and leave alone please. The tools you need for this cookbook are the following: regular oven/toaster oven, stovetop/hot plate, air fryer (I love mine!), microwave, and a slow cooker. That's it.
She also provides us with some dos and don'ts like no you can't microwave eggs in their shells....and I got some questions for some of you who have done this.
From there she marches you through tools you are going to need such as parchment paper/foil, baking dishes (small ones that are oven safe), etc.
Things I have cooked and loved:
1. the pepper and eggs (just switched out whole wheat bread for gluten free bread). 2. toasted chickpea salad 3. slow cooker spinach artichoke dip
I will definitely try out the rest of the recipes in the book!
I LOVE that this is a book of small serving recipes. In the first few pages the author indicates that these recipes are geared towards 1-4 people, small apartments/living spaces, and minimal appliances. This is rare in the world of recipes and cookbooks, and altering recipes for smaller serving sizes is not always possible, so I really appreciate what Jenna Hunter is doing! This book is very handy. I don’t love all the recipes in this, but there are maybe 10 or so that I bookmarked. I borrowed it from the library, but this would be a practical book to have in the kitchen and a good book for referencing!
This book has some great recipes in it. I LOVE the versatility of having a few different ways to cook a single recipe. It's really hard to adjust to cooking for only one person and this really helps with that! As someone that follows Jenna on social media i do think she has more versatility and variety in the recipes on line. The book did seem a little more focused on being a dietician than what she has online being more homestyle just yummy food.
I'm still very glad that I have it and use it at least once a week!
For anyone on Instagram, this is the cookbook for The Healthy Hophead. She specializes in healthy recipes for one or two. I have tried numerous recipes of hers and have not been disappointed. This cookbook was no exception.
