Fantastic explanations of technique, the science behind the techniques, and reasons common problems occur in baking cakes. Easy to read and extremely comprehensive in it's scope of baking cakes. Lots of unique cake recipes from around the world and wonderful histories and stories to accompany each recipe. Only drawback is that there are very few pictures of actual cakes.

I have not made as many of these cakes as I would like to have tried--she is an excellent cookbook writer for the baker and I would like to do more

An excellent collection of cakes. I liked the variety, the historical inclusion, the how to early chapters and much more. Worthy of winning the James beard award. Recommended.
