Champneys is a fashionable chain of British health resort and Adam Palmer is the group's executive chef. Like the resorts, Palmer's recipes are distinctly upmarket--no bare lettuce leaves here. Instead, there's "Chilled Roasted Vegetable Soup", "Crab Cakes with Fruit and Ginger Chutney" and "Fillet of Beef with Thai Green Risotto". Palmer gives scientific explainations of why his food philosophy ("Moderation; Balance and Variety") works and suggests ways of integrating this into a healthy eating plan. Though I was enchanted by the pictures and tasty sounding recipes in this book, I have ended up not making anything. The recipes turned out to be fairly complex and full of unfamiliar or hard-to-find ingredients.
