Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

Just finished this very abridged, but still very dense adaptation of Thomas Aquinas’s Summa Theologiae.
In it, Aquinas makes arguments for why we pursue happiness, what contributes to our happiness, and what complete happiness looks like. The big takeaway for me:
To maximize happiness, you need to pursue good, and the highest good is God.
The Trinity Forum published the version I read. It was much more approachable than the multi-volume Summa. They also include discussion questions if you want to read it with others.
