The best thing about this short, simple treatment of sushi making is the abundance of step-by-step photographs which lead even the Westerner's hands through the steps of the process. The text also offers more difficult preparations for those already familiar with the artform. The author was born and grew up in Nagasaki, moved to Tokyo to learn the craft of sushi, and returned to Kyushu to practice his art. He opened a sushi restaurant in Australia in 1997 and is a principal in several Japanese restaurants. His food is a mix of classic traditional forms and innovative modern forms of sushi; this is reflected in the text.

Includes basics with nice photos - How to cut and prepare fish along with some easy sushi recipes. Simple, but there are better sushi books out there. Sushi with Style is a quick guide that is packed with more info and also has a nice layout.
