How nice to have a cookbook that calls for cooking whole chickens as whole chickens! So many other recipes call for a whole chicken and then immediately tell you to cut it up (not my favorite job). But Poulet uses whole chickens or thighs, with permission for you to change things up as you need to.

Very easy to accomplish recipes that highlight chicken, from grilled bistro style to more regional recipes with an Asian or Mexican flair. The sides are fairly simple to compliment the poultry, the star of the show!
