Nathalie Dupree

Nathalie Dupree was an American author, chef, and cooking show host whose work focused on American Southern cuisine. She was the first woman since Julia Child to host more than one hundred cooking episodes on public television. Her first show, New Southern Cooking with Nathalie Dupree was followed by eight more series.
Dupree was the author of 15 cookbooks, selling nearly a million copies, and the host of more than 300 national and international cooking shows, which have aired since 1986 on PBS, The Food Network, and The Learning Channel. She appeared many times on the Today show and Good Morning America. She won wide recognition for her work, including four James Beard Awards including "Who's who in American Cuisine", Grande Dame of Les Dames d' Escoffier and numerous other awards. She was best known for starting the New Southern Cooking movement now found in many restaurants throughout the United States. She was chef in three restaurants, in Majorca, Spain; Georgia; and Virginia. For 10 years she directed the Rich's Cooking School in Atlanta, with more than 10,000 students. Many of them have gone on to careers in restaurants, cooking publishing, and food media.
Dupree ws the daughter of Walter G. Meyer and Evelyn Kreiser. After her parents divorced she grew up in the American South with her mother and two siblings. In the late 1960s Nathalie and her second husband, David Dupree, lived in London, where Nathalie attended Le Cordon Bleu cooking school, earning an advanced certificate. Following graduation she operated a restaurant in Majorca. Returning to the United States, she and David settled in David's home town, Social Circle, Georgia, where she established Nathalie's restaurant.
She was a founder and two-time president of the International Association of Culinary Professionals, founder and co-president of both the Atlanta and Charleston, South Chapters of Les Dames d' Escoffier, founding chairman of the Charleston Food and Wine Festival, past president of the Atlanta Chapter of the International Woman's Forum and ws active in many other organizations.
Dupree mounted a write-in campaign against incumbent Senator Jim DeMint in the 2010 Senate election in South Carolina. She sought DeMint's seat as a long shot, seeking to "cook his goose." She expressed a willingness to work alongside fellow South Carolina Senator Lindsey Graham to "bring home the bacon" for the state.
She was married to Jack Bass, historian and author, and they resided in Raleigh, NC.

I have an obsession with Southern biscuits and am trying to master the craft of a perfect biscuit. This cookbook really helped me hone my baking prowess. Mr. N was my official tester (it's a hard job but someone has to do it) and he agrees with me that this is a must-own cookbook!

Highly recommend!

I've only made 1 recipe from here so far (the Cream Cheese/Carolina biscuits), but my husband ate 10 of them (they are small!) and declared them to be the best biscuits he'd ever had, so this book is automatically a winner.

M. made my Mother's Day dessert out of here, too--a Sweet Cake biscuit that serves as the cake for strawberry shortcake. It was delicious!

Next up will be trying out another biscuit for my parents-in-law, who are visiting this weekend. My father-in-law has always seemed to enjoy the regular, Betty Crocker baking powder biscuits I've made before, so hopefully we can wow him.

A great book on baking biscuits— which, for me, has always had a mystical and somewhat untouchable quality to it. These two authors paint a picture of biscuit-baking that is both inviting and approachable. The lengthy introductory material gives a great overview of what makes a good biscuit, what can cause them to be difficult to make, hints on getting started with success, and encouragement about the patience and commitment it will take to become a good biscuit-baker!

What follows, of course, is a host of tested and proven recipes for biscuits of all sorts, and for all levels of experience. I can’t wait to try my hand at some of these.

Southern Biscuits is a delicious read for cooks like my husband and myself. My husband loves biscuits and grew up with them so he always searches for the flakiest and best ones. Dupree is the Queen of biscuits. She shows the reader many varieties of ways to make them Two important facts: 1) Acid (lactose), fat, flour with leavening is the basic recipe. 2)” Don’t mess around with them much”. Leave the flour alone. Cut in flour, add in acid-milk/buttermilk/sour cream/yogurt, stir and fold once, twice, three times add flour and form them. The self-rising flour mix is great to make in large amounts and then can be used for many other recipes. We took it with us to the beach this past week and made fresh homemade biscuits for the family. Everyone loved them.

Her recipes are hassle free. She has appeared on PBS, the Learning Channel, and Food Network. She lived in Charleston, SC until recently when she moved with historian and writer Jack Bass to the Winston-Salem area to be closer to family. I knew the family. Dupree has also written other food books including her famous Shrimp and Grits. This beautiful useful book includes beautiful photography and is the definitive biscuit book.

Great selection

The recipes in this cookbook offers so many choices you don't know where to begin.. You definitely have to practice a few times to get the feel of the dough but then you are on your way to making biscuits for every meal. You have a choice of breakfast sandwiches, tea biscuits, down home dinner biscuits, and even flavored butters to spread on your treats. With this cookbook you can enjoy the biscuits famous in the south. Mouth watering choices. Don't forget the chocolate gravy.

Biscuit Bible

Fantastic recipes. Will be trying about 50% of the recipes amd mixing my own flour. Wish the book had more pictures of the different biscuits.

Wow! Was an incredibly complete bibliography, this is truly an amazing Bible of all things biscuit, including savory and sweet variations and toppings. I found my new ideas to try!

Awesome!

I read through this book, and it brought back a lot of memories of grandmother’s various biscuits and rolls. I hope to make several of the recipes soon.

It's a great book about that southern staple food, homemade biscuits. There was a time before womp biscuits (the ones in the tube you womp on the counter to get out) when homemade biscuits were served at every meal. There are recipes for all types and well as great techniques and tips.
This was intended to be a chapter in their brand new several hundred page tome, "Mastering the Art of Southern Cooking" but it grew to the point that it needed its own book.
If you are a cookbook collector or just a fan of great food, add this to your library.

This is a wonderfully comprehensive biscuit book. Not everything I've made has been awesome, but I did find my #1 go to biscuit recipe in this book (Biscuit Supreme) and I've been searching for quite some time. I don't expect to love every recipe in a book, so long as at least one is stellar, it is worth the purchase price.

It's not very often that I purchase books, but this is a book that I want to own! Great recipes for biscuits, scones, and other quick breads as well as for jams, preserves, gravies, and other 'biscuit accompaniments'.

I just love this Southern Lady, Nathalie Dupree. My Mother in Law and I used to watch her show on PBS together and she even bought me one of her cookbooks. I still use this cookbook often. I don't enjoy cookbooks as much on my Kindle so I think I will order this one. Lots of great recipes.

Tried a few but my chief critic (spouse) was not impressed. Intend to go back later and try a couple more. Impressive number of recipes for biscuits and insightful tips about baking them.
