At the height of the 1880s temperance movement coffee palaces preached stern sobriety. In the 20th century coffee-lounge culture gradually supplanted the genteel tearoom tradition. During World War II American soldiers were scornful of Melburnians' inability to make a decent cup. In the 1950s the youthful craze for espresso, fostered by new immigrants, vitalised the city - and alarmed some members of the public.
