Big, lovely book, with basic cooking info, typical vegetarian recipes, and some I've never seen or tried before. Could be a GREAT book, if only more pictures and NUTRITIONAL INFO.

This is a wonderful recipe book filled with delicious sounding food! I can't wait to try the individual spinach, asparagus, and white bean lasagnas. The caramelized onion ravioli with portobello mushroom sauce sounds interesting too!

Cookbooks that inspire as well as instruct are a find, and this one is both. The appetizing photos, simple recipes and clean page layout made me want to put down the book and start cooking. A bit large and heavy for the kitchen (coffee-table book size), but if you're a seasoned vegetarian like me then you've probably cooked many of the recipes already in some form and use it primarily for motivation.

What a beautiful cookbook! Unfortunately there are a lot of gluten-containing recipes & although I am pretty good at adapting recipes for this, most of the dishes in question can't really be adapted with GF ingredients (hence 3.5*). If a GF diet is not important to you, I'd highly recommend this artful veg cookbook.
The lovely soup shown on the cover is Gaspacho Verde.

Just got as part of my Vegetarian Cuisine class at the Culinary Institute of America. Hoping it will be as good as the class was.

Would be improved by stating, next to the recipe, the corresponding page of the photo and by including the nutritional information for each recipe
