Mexican Light: Exciting, Healthy Recipes from the Border and Beyond

Rate this book
As she did in her bestselling, highly acclaimed Mediterranean Light, Shulman creates marvelous healthful adaptations of classic dishes - this time re-creating Mexican cuisine, her first love as a cook. The result is a cookbook to treasure. Mexican Light lets you eat all the irresistible foods from south of the border - for parties, for company, and for every day.
Largely vegetarian but with an abundance of chicken and fish dishes, the recipes in Mexican Light are a great way to keep within dietary guidelines without sacrificing an ounce of pleasure.

Mexican food beyond the cheese...I really liked some recipes in this book. Light aside, there is a good mix of recipes in this cookbook...even though I'm drawing a blank at the moment of what they were.

Just checked this out from the library and am really enjoying it. Try the Lentil Soup with Chipotles and Plaintain Garnish. Yum!
