I really like this book because the recipes are accessible and nutritious, being simple and generally made from affordable, widely available ingredients like beans, lentils, potatoes, onions, peanuts and a few spices. No special equipment is needed and most can be prepared in one pan. Nonetheless, the variety is huge. Most are vegan or easily veganised (my top tip - for any kind of omelette or fritter substitute chickpea flour & water for the eggs)
