Collected recipes from ten years of groundbreaking food publishing and support for fair trade. Features easy-to-cook, vegetarian, and very tasty dishes from Latin America, Africa, Asia, and the Middle East.
Try the famous Malaysian gado-gado (salad with peanut sauce), stuffed eggplant from Haiti, or Moroccan khboz (spicy spinach and cheese pastries).
I really like this book because the recipes are accessible and nutritious, being simple and generally made from affordable, widely available ingredients like beans, lentils, potatoes, onions, peanuts and a few spices. No special equipment is needed and most can be prepared in one pan. Nonetheless, the variety is huge. Most are vegan or easily veganised (my top tip - for any kind of omelette or fritter substitute chickpea flour & water for the eggs)
