Some of these seem like they could be really frustrating to construct.

I liked this book about how to make different things. It carefully explains some of the scientific ideas (like using truss to create a fort made out of newspapers or using a pulley to create a door opener). It uses materials you can find easily around the house and I'll bet kids will love some of the ideas... like a trash grabber.
