Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

The Bhagavad Gita is the best known and most widely read Hindu religious text in the western world. This translation is great for non-speciallist or first time reader like me. The introduction and notes are the best as they help you understand the cultural and historical context of the story. I really appreciate it as a self help book. I hope you enjoy it as much as I did.
