Beatrice Ojakangas has a rich background in Scandinavian cuisines, traditions and history. She and her husband, Richard, are second-generation Americans. All of their grandparents came from Finland. As they visited in Finland, Beatrice, known as "Peaches" to her friends and relatives, became interested in the foods and traditions of all Scandinavian countries. She has a special knack for making friends, and now has many acquaintances throughout Scandinavia. She is known for the sumptuous smorgasbords she prepares and serves in her home. If you visit in northern Minnesota, you may find her teaching cooking classes in her large, well-stocked kitchen. Or she may be assisting with Scandinavian heritage-appreciation camps. Beatrice has authored a Finnish cookbook and numerous articles on Finnish and Scandinavian cooking.
Some simple home cooking recipes. Though I still think I'll have trouble finding smoked reindeer meat in the Midwest. But my sources tell my I can substitute venison and get pretty close. Best to save the reindeer meat for the holidays.
Finland isn't necessarily known for its great food traditions but this book does give some insight into them from the view point of a finnish-american. The cultural information this book provides is priceless. I hope that to work my way through the book someday. Some of the techniques are a little old school but they are still worth a try.
Not just a great cookbook, but has information on the culture, people and country, and the language. Each chapter has info. and research on the food and how it relates to the Finnish diet. A great book.
A collection of over 400 recipes that originated in Finland. There are some unusual dishes here such as salted tongue. There are also some game recipes.
