Written by two passionate countryside campaigners, Clarissa Dickson-Wright and Johnny Scott, this authoritative book features over 140 easy-to-follow recipes from stir fried pheasant with mustard beans to salmon fishbakes made with gnocchi.
Clarissa Theresa Philomena Aileen Mary Josephine Agnes Elsie Trilby Louise Esmerelda Dickson Wright is an English celebrity chef and food historian who is best known as one half, along with Jennifer Paterson, of the Two Fat Ladies. Having trained as a lawyer, at the age of 21, Dickson Wright passed her exams and became the country's youngest barrister. She is also one of only two women in England to become a guild butcher.
A lovely book with useful information on different game types such birds, wildfowl etc., sub divided into specific subjects, pheasant, partridge etc. Many of the accompanying recipes are illustrated in colour and there a number paintings and drawings on hunting subjects. Surprisingly CDW credits a butcher for supplying most of the game used in the recipes. Considering she shoots herself, as does her co author I thought this rather strange !
Rereading this I note one recipe is ' bollocks to Blair ' ! So called as when CDW and Johnny were at book signings he invariably added this phrase under his signature. Blair, who was PM at the time, was soundly disliked by the hunting and farming fraternity and CDW turned down invites to cook for him at Downing Street. Why ' bollocks ' ? The recipe call for 6 roe deer testicles !
