Bec. of State Board of Health in early 1970’s, all grade A milk shippers changed to bulk tanks instead of 100-pound milk cans. Dumping stations were closed and milk was shipped by tank trucks every other day, so milk had to be refrigerated. Therefore larger herds were needed to make it profitable. Hand milking stopped. Windmills for getting water were replaced by a diesel engine to run the milking machine and refrigeration system. More water is used today, compared to the pitcher pump used previously. The Plain people believe that the farm is the best place to raise a family. But changes are forcing the Amish to seek employment outside of farming. Plain People usually have at least 6 children in their families – not enough land to support each child. The Amish population is ~ 14,000 in Lancaster County.
