Quick Breads can be made in minutes, since they do not require the prolonged kneading and lengthy rising and proofing. Instead of yeast, these breads are made with rising agent such as baking powder or baking soda that begins to release gas bubbles the moment it is moistened. When making quick breads, it is important to blend the wet ingredients separately and combine then just before baking. Swift, gently mixing is essential because if the batter is beaten too vigorously, the gluten in the flour will strengthen the mixture and the texture of the loaf or muffins will be tough. Also added some of our favorite coffee cake recipes, perfect with morning coffee, snacks or desserts.

No illustrations

There is a working table of contents, which is nice. The entire layout is almost chaotic, and each section is not notably segregated. There is a "Return to Table of Contents" after each recipe that would be truly handy if it actually worked. For a couple bucks, yeah. It's probs worth it. Some recipes look tasty, and I'm pleased this is available through KU. It might be worth buying based on recipes alone, but I would not buy a paperback of this product

Tried Apple cake recipe

Disaster! Including mess of my oven. I thought it seemed like a lot for a 9 inch pan, should have followed my instincts. Even for free, thus was an expensive book for the amount of time and ingredients wasted.on the recipe and clean up!

While I haven't tried any of the recipes yet, they seem simple to make and some great sounding items! Will definitely try the blueberry muffins/bread items once blueberries are in season!!!

Though rather short, some of the recipes in this book sound absolutely amazing. I will definitely have to try them.

Great little cookbook!

Lots of recipes that I remember having as a child......my "to do" baking list just grew. Lol!

A fabulous collection of breads and muffins. Unlike many cookbooks I’ve seen on Amazon, this one has far more than I could easily count. It starts off with quick breads like carrot bread and the sort that will rise with baking powder. I haven’t made it past the quick bread but what I have made so far has been excellent. Looking forward through the book I see many promising recipes I am eager to try. They all look delicious. The instructions are easy and the ingredients simple to source. Very nicely organized.

Country Baking Quick Breads and Muffins (Delicious Recipes)
Few pictures, no nutritional information and the recipes use a lot of butter and sugar that could be substituted for a healthier choice.
Lots of tips and help at the end of the book where there are other recipes and collection of books to also obtain.

So far this is the best free ebook I downloaded from amazon all day when it comes to recipes.
