I purchased this book (via the Kindle Store) to use as a source of information for a research project I was doing for a class. I enjoyed the writing style, so I decided, "I've read this far, why not finish it?" I'm glad I did. I learned quite a lot about the restaurant industry that I didn't know. The only reason I didn't rate it higher is that I was reading it as a layperson and an industry outsider, so some parts of it were not very interesting to me. I'm sure they would be very helpful for an actual restaurateur, though.
