This book I got from my library and was very disappointed. I'm all for healthy eating BUT you have to be able to afford healthy ingredients. This book uses numerous amounts of food that I either don't have in my pantry, would never use again or even heard of before. I would not or did not make a single recipe. They did not appeal to me.
Let me start by saying I read a lot of cookbooks/food books. When I get a book from the library, I flip through it to see if I even want to read it. Then if I read it, do I want to make any of the recipes. Finally,I decide if I love it, I buy it. This one I read and I will say I did not make any of the recipes. None of them really appealed to me. I liked the information in the book but not much different from other 'health' books I've read. The recipes, however, left something to be desired. I think where I officially closed the book is where there was a recipe for tacos used a crumbled boca burger. I think the author is good about providing lots of information on the dangers lurking in processed food and how to eat healthier, but not a recipe creator. I do have another book by this author and plan to read it. I've already given it the flip through and it passed.
If you are nondairy like me but love to throw dinner parties, try this book. We just had guests for a week (with more family on the way!) and yet I managed to keep the cow out of my recipes. I have been told that Marilu's cold noodles recipe is the best they have ever tasted.
My only problem with this cookbook was that most of the recipes had too many ingredients for day to day cooking. However, you can easily simplify many of the recipes (especially the soups and stews). This book gets me excited about eating my fruits and veg. Beautiful food photography.
This is an awesome cookbook with great resources and information on healthy eating. I bought this book the day it came out and over a decade later these recipes are in my regular rotation. Some of my favorites are Creamy Daikon Soup, Butternut Squash Pasta and Chocolate Almond Toffee Crunch.
