Although this book is over 20 years old, the recipes still hold us. Especially in summer when everyone is looking for something easy and cool, icebox pies are a great idea. I would have appreciated more pictures. I'm looking forward to trying: Frozen Cranberry Mousse Pie (excellent for Thanksgiving!!), Chocolate Cream Cheese Pie, Mango & Coconut Ice Cream Pie AND Triple Chocolate Mint Pie.
The 1st was a Lime-Coconut icebox pie and I was pretty pleased with how it turned out.
The 2nd was the Lemon Icebox Pie and it was a disappointment. I followed the instructions to the letter and yet the pie never did "set up" in the fridge. When I went to serve it, it was a slumping mess of lemon-flavored whipped cream. It was tasty, for whipped cream, but it was not my idea of a pie.
Pies usually involve lots of work. The author has put together a collection of interesting recipes for a variety of refrigerator pies that do not require baking which cuts down on production time. There are some standard classics in the collection as well as some lesser known varities.
