From my point of view, I found this textbook to be of 0 use since it was all very basic information that I knew 30 years ago. If you don't already know that stuff, you are going to have a very different experience of this book. After skimming the recipes listed in the contents, I scanned a couple of the recipes and decided they seemed pretty basic as well. So if you don't know anything at all about nutrition, and also want a basic introductory cookbook with a representative variety of recipes to start out with with basic nutritional info, you may find this book useful.
