I love to cook creatively, and my excitement about new flavours and textures from all around the world defines that I create fusion cuisine. If you've visited any of my restaurants - The Providores and Tapa Room or Kopapa in London, or The Sugar Club, Bellota or dine by Peter Gordon* in Auckland - you'll already know something about fusion. But if not, you can get a primer in the Fusion section, or take a look at the Food page.
I'm based in the UK and New Zealand, and I travel a lot, so I mean it when I say that the global pantry is my inspiration.
Everyday is an absolute delight. I love gorgeous pictures and a well-styled cookbook and this one delivers. More importantly, the food has to be actually delicious and easily created. This book uses attainable ingredients in easy-to-follow recipes; I haven't struggled with one yet! I love his common recipes that use a surprising ingredient or two to kick it up a notch. There is a good mix of quickly-made and longer-prep meals.
My last requirement for a great cookbook is the wholesome quality of the food. My family and I work hard to have a nutritionally balanced diet and this book falls in that category. Even the desserts are decadent and filling so they don't require huge portions to feel satisfied.
I look forward to working my way through these recipes and feeding my family wholesome meals. This is definitely a winning book that will be regularly rotated into my meal planning.
