Coconuts have been used for thousands of years in traditional medicine for their healing and beautifying properties, as well as being used in anti-viral and anti-bacterial products. Coconuts also show promise in stabilizing blood sugar and as a natural weight loss aid. This unique superfood can even be made into flour and used in gluten-free cooking and baking. Coconut: 75 Recipes for Reducing Inflammation, Improving Heart Health, and Healing Digestion shows you how to integrate coconut meat, milk, oil, butter, and flour into your diet with 75 delicious recipes for incredible health. This handy guide provides an overview of coconuts, fun history and facts and its reputed nutritional benefits, along with a focus on key nutritional properties and “cures” associated with coconuts (detoxification, weight loss, super immunity, disease fighting, and beauty to name a few). Each chapter references studies and research. There are so many ways to use coconut - the possibilities for cooking and healing are endless!
Learned lots of new stuff about coconut, good to see some actual research about the health benefits of coconut cited (but why no references or awkward sentences like "the Journal of such and such says 'quote here'?!). Some recipes look seriously good but a lot of them are basically about substituting oils / fats with coconut oil (I'm all for it but I'd probably expected - and hoped for - a few recipes that included coconut flour as well). That said, I made the raw chocolate coconut truffles today and they are seriously delicious!
I also appreciate the chapter on coconut for beauty purposes. Some good ideas for making your own coconut scrub or moisturiser there.
I love this book..i expected it to be a cookbook and was delighted to see it was so much more.the information in this book is very informative and gives the reader a start to understanding all aspects of what the coconut can do for them....
I'm not what I would call a coco-"nut," but I found a few good alternatives for our dairy-free family member...Especially want to give the coconut whipped cream a whirl.
Good info and delicious recipes! Not gluten-free, but you can always substitute ingredients if necessary. Needs more pictures, as well as footnotes for cited articles and scientific studies.
