Disclaimer that I haven't made anything yet from this cookbook but I'm really looking forward to when I do! I bookmarked a ton of recipes that look amazing, and the concept is honestly top notch. I appreciated the diversity of flavors and food types here, while keeping things relatively simple. Lay flat binding, with most recipes having a photo. Definitely a cookbook I'm glad to have picked up!

These authors view the sheet pan as the superhero of the kitchen and I didn’t see it before… but I do now! Everything I made was easy and delicious. I can make food for every occasion and all I have to do is prep and walk away?! Who knew?? I’d actually avoided sheet pan meals until now because in my experience one component is always overcooked and dried out. Not here! I am a sheet pan convert!! Thank you Harvest for the gifted copy! (Also thanks Olga and Sanae for telling me which vegetable to have with each meal and for a cookbook that lies flat and stays open! 💕)

Here’s what I made:
🧀 All-the-Crispy-Bits Mac and Cheese- holy cow. I knew this would be a winner when I sampled the cheese sauce. Perfect seasoning to complement ultimate cheesiness. No flour needed either which is great for #glutenfree! And then the texture was great too! I thought it might be dried out and hard? Not even one inch of it!
🍗 Homemade Shake ‘n Bake- I’m not a chicken as a main dish person because it’s usually boring and sad… not here! These women have changed my mind once more! The coating on this chicken was flavorful and the meat was moist and amazing.
🐟 Oven Fish Tacos with Avocado, Radishes, and Cumin-Lime Crema- this was a party in my mouth. Such great toppings. AND my fish-hating daughter sheepishly admitted that she liked it. Score!
🍌 Caramelized Bananas with Ice Cream- I loved the deep roasted banana flavor SO much that I felt the ice cream took away from it. I cast that ice cream aside and relished my caramely bananas 🤤

Is this the best cook book I’ve ever used? No. Does every recipe I have made spark joy? Absolutely. The whole chicken recipe was a revelation. It was so easy to make and my husband described it as ‘like thanksgiving dinner on a Monday.’ The fauxgine, also incredible. Pork chops, a slam dunk. If the first 5 recipes I make are all extreme winners I will put into rotation, it’s a 5 from me.

I actually wanted to make more recipes from this but the library wants it back, so I guess I'll review it now. But I might check this out again, especially that Potato Ricotta Galette has my name written all over it, I just didn't get around to it yet!

So, yeah, great book. I was a bit worried that when centering your recipes around the cooking method (the one in the title), it would be limiting. But no, there's a beautiful range here. From breakfast to appetizers tons of main and side dishes and side dishes that could be main dishes if you add a little protein on the side and then of course desserts. Growing up in a family that cooked and boiled everything aside from the occasional roast, discovering that roasting veggies is a thing revolutionized my cooking game a few years ago. This was the logical next progression. There were a few recipes that could have used a bit more in spices (especially when they claim it was supposed to be hot and spicy it rarely ever was), so I trusted my instincts and added more in. A few things fell a bit flat but taken as an inspiration board this was a great cookbook.

But what did I cook?
- Roasted Cherry Tomatoes with Whipped Ricotta: a simple thing, you're just roasting tomatoes. But sometimes you simply need someone else to think it up! This was part of my Oscar Night Smorgasbord, additionally I am currently knee deep into a Ricotta obsession and this was lovely. 4*
- Spiced Yogurt Chicken with Chickpeas and Eggplant: Listen, the chicken was a bit boring. Sorry. But that eggplant-chickpea blend? Get out. Never roasted an eggplant and it was amazing, and I've always loved chickpeas. Though I did add coriander, paprika and chili which leaves me unsure as to how to rate this. Like I said, this book was more an inspiration board at the end of the day... 4*
- Lamb-Stuffed Tomatoes with Fancy Hats: Okay, this was on me. I don't really care for stuffed veggies. I always feel like the meat in the stuffing gets a weird texture? But I had some lamb left which I baked in meatballs on the sheet and those were much better. 2*
- Roasted Peppers & Onions with Tuna and Feta: Served this with some nice bread and it was maybe my favorite recipe in here. Again, a simple concept, you roast a bit then add some things and you have a wonderful snacky dinner. 5*
- Cauliflower Steaks with Parsley Sauce: I am not sure about the steaks, they didn't really hold the shape and after I thought it would have been better to simply do florets... A fine side dish that can easily be expanded into a main by adding some protein. I need a better blender though, my sauce was not super smooth but that is not the book's fault. 3*
- Curry Gratin Dauphinois: Another highlight. Who knew that just adding curry powder could be such a game changer but it totally was. I had it with some white fish, very delish! 5*
- Brownies with Mint Cream: I love a brownie, it might be my favorite baked thing (maybe). These were good, with a nice crinkled top. It is claimed in the description though that these are not very sweet, I however reduced the amount of sugar which I often do with American recipes and still found them very much on the sweet side. The mint cream is a nice touch but not exactly life changing. 3.5*
- Lemon Bars for Winter Blues: I am for sure a connoisseur of Lemon Bars and while prepping these I was a bit underwhelmed with how flat they shaped up to be. But the taste and texture? They don't need to be larger at all, such a wonderful crust and very lovely taste. These I will make for sure again. 5*
- Granola Topped Apple and Pear Crisp: Personally, I believe Crisps are the superior pies! This is from the dessert section I did however prepare it for breakfast with some Skyr. I also used a different granola recipe, the ones in here didn't appeal to my taste buds. It was so good on a cold winter morning. 4*

If you are a fan of sheet pan cooking then you will likely appreciate this offering that covers all the bases from appetisers to desserts. Recipes are well-written and there are color photos for most of the dishes. Many pictures are of the cooked dish on the sheet pan and I would have preferred they had done this for all the recipes instead of showing the plated final product. I always worry sheet pan meals will be too dry or will be too saucy and overflow the pan, seeing the finished dish on the pan is more helpful and helps with alleviating this anxiety. Experienced cooks are less likely to find new ideas as recipes are somewhat familiar but less experienced cooks looking for easy-ish one pan meals will be quite sated.

I'm excited to try some of the recipes in this cookbook. I love one-pan cooking! It is easy to clean up and usually goes together quickly, too. I'm most excited to try the Blackberry-Lemon Clafoutis!

Practical and original, each recipe is a strong and compelling argument for Sheet Pan cooking and baking. The authors lend their individual voices to each recipe and the Introduction in their explanation for how the book cam to be. They include information about ovens, Tools, Pantry Items, and some favorite kitchen tricks, ending with Acknowledgements and an Index. Divided into chapters that give you an overview of the scope of this inviting and practical cookbook: Breakfast and Brunch; Appetizers and Small Bites; From the Low Sky: Poultry; From the Land: Beef, Lamb, Pork; From the Sea: Fish and Shellfish; From the Garden: Plant-Based; Sweet Treats, and Simple Pantry Recipes that include cooking rice ad making “Quickles,” and roasting nuts. Bright and rich photography enhance the flavor the book and almost all the recipes, as well as a comprehensive ingredient list, an overview of the dish by one of the authors, and clear, helpful instructions, many hot tips, and encouragements. Readalikes are Melissa Clark’s Dinner in One, Sarah Rossi’s What’s For Dinner? in One Pot, Edd Kimber’s Sheet Pan baking books, and Yossi Arefi’s Snacking Bakes.

I’ve bought and read some sheet pan cookbooks before and I haven’t really been inspired by what was on the page. Hot Sheet by Olga Massov and Sanaë Lemoine is different.

You can see by the bulleted list above that there is more than just roasted chicken thighs with veggies to these recipe. There is everything here. I also loved that the sheet pans in the photos looked well-used and not pristine. (I am often embarrassed about the state of my pans.)

When I think of sheet pan cooking, I think of easy dinners, definitely not presenting brunch. There are the egg dishes here but I LOVED the Roasted Strawberries with Yogurt and Sumac (19) not for just breakfast but to have around for snacking all day (and dessert). And, I guess I never thought about making sheet pan frittatas to serve a crowd. There are savory bread puddings (with leeks and pancetta) and sweet ones (coconut with lime). Of course sheet pans are perfect for baking granola and granola bars.

Again, appetizers and sheet pans don’t pair together in my head either. But, here they are…again, not rocket science but things not usually included in the typical “sheet pan” book: Focaccia w/Olive oil and Soy Sauce Dip (44), Chaat Masala “Nachos” (47), Roasted Dates w/Blue Cheese and Hot Honey (58).

There are the obligatory chicken recipes in “From the Low Sky.” The authors go beyond the roasted chicken with veggies theme with Chicken with Clementines, Dates, and Capers (79) and Spiced Yogurt Chicken with Chickpeas and Eggplant (82). “From the Land” covers the beef, lamb and pork recipes. Standouts here are Cuban-Style Roast Pork with Mojo (103), Gochujang Steak Fajitas with Kimchi, Onions and Peppers (108), and Open-Face Croque-Monsieur (102).


The recipe that I actually tried for this review was Japanese Oven Burgers with Cabbage Salad (111). While the cabbage salad and accompanying rice was not made in the oven I appreciated that the sides were suggested and the recipes were listed here. The burgers were GREAT. The ketchup sauce is elevated with Dijon, Worcestershire, soy, brown sugar and butter. The sauce is actually finished on the hot sheet pan. This was an easy and remarkable meal. Desserts are obviously focused on because what can’t you make in a sheet pan. There are typical recipes but the author elevate them. To round out the book, they include “Simple Pantry Recipes” for rice and salads.

I feel like this is not a definitive review and is shorter than most but this book is scheduled to be back at the library like yesterday. I’m heading to the kitchen and will keep you posted.

Of all of the books I have reviewed this year, Hot Sheet is one I actually might buy. It’s most worthy.

Hot Sheet has a hint of the old charm of Martha Stewart “one pot” recipes but modernized for more adventurous palates. The recipes in this book are generally easy. They use pantry staples with a little bit of (occasionally unnecessary) extras.

I made “Chicken with Clementines,” “Arrabbiata and White Bean Cheesy Ravioli,” and the “Gnocchi with Broccoli and Lemony Ricotta.” Although I made tiny changes to each recipe, (and the amount of ravioli was clearly wrong in the “White Bean Cheesy Ravioli",) each recipe was a burst of flavor with little mess. In fact, the Gnocchi with Broccoli was so good it didn’t need the Lemony Ricotta that is offered as a dressing. My only complaint about “Hot Sheet” is that even though the recipes all rely on one sheet pan to be cooked, they use more bowls than are really needed. I bought a copy of “Hot Sheet,” and I don’t regret it at all. I’ve got lots more to cook out of it. BUY IT.

maybe 3.5 stars. i've made a couple dishes, which turned out pretty good. some of these were really unexpected or creative, although i generally found them to be fairly involved, tending more toward celebrations than every day. i wish more of the recipes offered a veg adjustment or substitution, which they do offer at some points.

and i have to lodge a complaint, which is that a many of the dessert options have a portion made in the sheet pan, but i would not call them a sheet pan recipe by any stretch of the imagination. if you make a cake in the pan and then have to do a ton of other stuff and assemble, that does not make it a sheet pan recipe.

worth a flip through to get you out of a dinner or dinner party routine

Excellent cook book! I got this from the library and it's not one that I'll probably purchase for my collection, but enough of the recipes sound interesting that I plan to make a few of them this week and next. I like that most of these are very much minimum effort, week-night meals and they use non-standard (to me at least) flavor profiles. Also, I don't know if it was intentional but a lot of recipes pull from the same ingredients so you can repurpose them over different nights to reduce food waste!

In particular, I'm excited to try the sumac roasted strawberries, the dijon mustard whole roasted chicken, the thai-inspired fish in papillote, and the lebanese-inspired roast eggplant.

Some gorgeous pictures but not what I was expecting...this is more of a high brow recipe book, not a daily, open on the kitchen counter & throw together a tasty dinner. That said, I did find a few recipes here I'd like to try:

p. 44: Focaccia with olive oil and soy sauce dip
p. 114: Oven milanesas with tomato salad

This has been a satisfying cookbook. We tried a couple savory, including some chicken bakes, for dinner and they came out well. The spiced nuts were a big hit as well. Will certainly continue to cook from this book.
