This book has lots of great information and it is pretty well organized, however, it is thick and hard to hold. You have to be committed to finding out the information or you will get side tracked or lose interest. It would be better as two volumes....one for home cooking and one for eating out. I continue to look through it and find the information that I need, but some of it is overkil
