I don’t know why people only give this book 3 stars I love this book it’s an a-z of cooking and has over five hundred recipes but what I love is all the little tips in this book they are amazing. So I’ll start with A. A is for anchovy he will tell you about anchovies belong to herring family and come fresh , salted, and then the inferior in oil and brine ect , than has anchovy and roasted peppers compote , than tells you you can serve on an antipasti plate and page number for that recipe than has an anchovy butter recipe tells how to make and freeze leftovers than can use leftover butter with grilled steak or fold into a white or béchamel sauce on page 60 with some parsley for a perfect partner to lamb or mutton dishes than an anchovy dipping sauce tells you it’s great for raw cauliflower but also grilled fish or folded on steak than has a little side note saying 2 tbsp of anchovy essence folded into 600ml of melted butter pairs perfectly with asparagus or boiled artichokes than a Caesar salad dressing than has a note how to make the Caesar salad how to make anchovy powder and uses .how to make a quick spaghetti sauce with anchovies and white wine how to make anchovy mashed potato by frying onions in butter and fold in anchovy than double cream than fold into mashed potato with spring onions and chives and how you use fresh anchovies , how to remove the back bones another quick note instead of adding salt to gravy add anchovy essence, another note on when roasting your leg of lamb stud with garlic, rosemary and some slivers of anchovy. Than a quick hot sauce recipe for cod or Talbot or halibut that’s first 2 pages on a for anchovy this book has me always having ideas for that bit of leftover fruit juice or piece of rind awesome book with great side notes and really great easy recipes some very simple recipes and ideas to up your cooking. Really recommend this book. Has everything from aioli to zhug . One book I would definitely keep if I was only allowed to keep twenty of my 800 cookbooks
