Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

This book in an anthology of short stories dealing with murders, mainly set in the UK. It weas a fundraiser for Rotary International to irradicate polio. There were several writers and short stories, each one I thoroughly enjoyed. Each story held my attention and kept me turning the pages. A great read for a true crime junkie.
As always, with an anthology, I enjoyed some more than others, but overall, a brilliant collection of short (mainly crime) stories from some brilliant authors, published together for a brilliant cause.
