Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

I received this book as a gift when I completed several Bible studies and while it's not the best book it is great for anyone who is learning about the Bible and those times and who has basic questions. It doesn't contain much (if any) Hebrew or Greek which is fine for most people, however I would like a book that does have the translated languages in it as well for furthering my knowledge and study. For finding out what those random words that we don't use anymore are this book is great. It also comes with a part that allows you to look up things like "thanks" and shows you where that is used in the Bible as well as a timeline of sorts of the entire Bible which is nice as it places things in order. It has pictures of the different coins and things used as well back then though, it is unfortunately lacking maps. A 5 out 5 as a starter book or someone new to the Bible, but for my preference it is a 3 out of 5. Good information, just not enough of it.
I decided to give it three rather than two, because over all I feel people who would buy this would find it perfectly adequate. However if you desire to conduct in depth studies of scripture or the ancient cultures involved therein I suggest something a little more substantial (in size and content). This one is convenient and hardly weighs anything, but only wet the pallet of my curiosity when I wished it would be more of a thirst quenching relief. One more suggestion to any who would use this as a study aide, get a couple good maps of the areas and kingdom divisions for the time periods because while this book is full of little digram sketches no maps are included. I'm sure they would prove useful in seeing the broader picture for any visual learners like myself.
