I'm surprised to see reviewers having difficulty with the recipes turning out - that has not been my experience with this book at all. I've loved everything out of it - but that's because despite the subtitle "The definitive encyclopedia of healthy vegetarian food" it is not, really. I mean, it's full of veggies and anything made at home is healthier than eating out (most likely) but the amount of calories packed into most of these recipes is outrageous. I almost always have to scale back on the amount of cheese and/or oils. That said, they are guaranteed delicious!
There is a good amount of space in the front of the book devoted to describing and explaining the different vegetable groups which is well-written and interesting.

The first part of the book is a description of different kinds of vegetables, or what we commonly think of as vegetables (eg. peppers are really a fruit). A bunch of nice info in there - Did you know that there was a Greater Yam weighing in at 137 pounds! (That weighs more than my college daughter).
The rest of the book is pretty standard cookbook: appetizers, soups, main courses, deserts, etc.
The book is culturally well rounded (there are a few South American, African, Mid-eastern and Asian recipes) and the array is widespread for taste ideas.
There are plenty of clear colorful photos, which includes some step-wise photos. Ingredient lists and details seem to be informational and instructive. A nice addition to any vegetarian bookshelf.
One of my favorite cookbooks of all time. I bought it fresh out of college and have worn it out during my adult life. The recipes are delicious and sophisticated.
