Dr. Alejandro Junger was born in Uruguay. He graduated from medical school there in 1990 and moved to New York City for his postgraduate training. He completed three years of training in Internal Medicine at NYU Downtown Hospital and three more years of fellowship in Cardiovascular Diseases at Lenox Hill Hospital.

His drastic change in lifestyle and diet from his move to New York City soon reflected as irritable bowel syndrome and depression. Becoming a patient of the system he was practicing was such a shock, that it started a journey to search for an alternative solution to his health problems.

His findings are the subject of his first book, Clean. In it, Dr. Junger describes how he became aware of the toxicity of our planet. He also explains how detoxification and cleansing have been around for thousands of years, but knowledge about them has been lost at at time when it is more important than ever before. Most importantly, Clean is a manual for readers to learn how to turn our detoxification systems on full speed, while supporting our bodies to maximize their effectiveness.

He lives in Los Angeles with his three children.

Fair warning: I stopped reading a few pages in after the author failed to provide any evidence, studies, or reasoning behind his insistence on a gluten-free diet for everyone...other than it causes "lots of health problems". That coupled with the fact that he called kombucha a fermented mushroom tea (it's not...it's actually a bacteria) made me question the authors credentials enough to stop reading.

I read Alejandro Junger's book "Clean" and was intrigued. This book, basically, is just recipes that can go along with it. While the idea of this really does appeal to me, I find that many of the recipes require obscure ingredients and, honestly, are not that satisfying. The diet that Junger recommends is too restrictive for me. He claims to love food and to want to encourage that love of food in all of his readers, but then basically says you can't eat entire portions of the food pyramid (instead of suggesting moderation). I know myself well enough to know that cutting out gluten, sugar, dairy and caffeine out from my diet is unrealistic and unsustainable. But, if you're looking for recipes for an elimination diet - this may be just the book for you.

Oh, and the smoothies are all flavorless. Not sure how it's possible, but they all taste the same - bland and gross.

Erst einmal möchte ich grundsätzlich sagen, dass ich das Clean Eating Konzept für das überzeugendste Ernährungskonzept halte. Das Buch ist zwar grundsätzlich ein Kochbuch, aber auf etwa zwanzig Seiten wird das Konzept noch einmal erklärt. Es werden die wichtigsten Nahrungsmittel und Küchengeräte aufgezählt und erklärt. Auch zum Planen, Vorbereiten, Abschmecken, Improvisieren und Experimentieren gibt es Hinweise. Nichts wirkt hier überladen und trotzdem bekommt man einen guten Eindruck vom Clean Eating Konzept. Außerdem wird alles sehr locker und natürlich erklärt.

Der Rezeptteil ist unglaublich umfangreich. Jetzt kommt aber gleich meine erste Kritik. Auf Kosten dieser Quantität ging leider die Bebilderung. Es gab nur zu sehr, sehr wenigen Rezepten Bilder. Das ist vor allem deshalb schlecht, weil es doch recht ausgefallen Rezepte sind, von denen man teilweise absolut keine Vorstellung vom Endprodukt hat. Da hätte ich lieber auf einige Rezepte verzichtet und dafür lieber zu jedem Rezept ein Bild. Und wenn ich gerade bei Kritik bin, lege ich gleich noch die nächste nach. Die Zutaten sind sehr überschaubar, was ersten natürlich zum Clean Eating Konzept passt und zweitens mir super gefiel, aber es gab auch Zutaten von denen ich noch nie etwas gehört habe. Das waren zum Beispiel Kollagen-Hydrolysat, Mariendistelsamen, Garbanzobohnenmehl oder Medjoodatteln. Also ich kenne ja wirklich schon echt viel, da ich etliche Koch- und Ernährungsbücher gelesen habe und oft im Reformhaus und Bioladen einkaufe, aber hier im Buch gab es da doch so einiges, was mich noch zum staunen brachte.

Allgemein sind die Zutaten für Neueinsteiger in das Thema gesunde Ernährung sehr ausgefallen. Bei Lesern, die sich schon etwas länger damit beschäftigen, werden wohl Dinge wie Kokos- oder Mandelöl, Chiasamen, Xylit- oder Kokosblütennektar, Teriyaki-Sauce und Kokosöl bereits im Schrank stehen oder man weiß zumindest, wo man sie bekommt. Viele der Zutaten bekommt man sicher in Kleinstädten und Dörfern nicht, es sei denn man hat ein Reformhaus oder sehr gut bestückten Bioladen. In Mittel- und Großstädten findet man heute ja überall Bioläden und Reformhäuser. Einige Zutaten bekommt man auch bei normalen Discountern oder Supermärkten mit Bio-Angebot. Einfach mal so im Schrank werden viele der Zutaten eher nicht stehen, da sie meist doch sehr kostspielig sind.

Die Gerichte im Buch waren wirklich sehr zahlreich und abwechslungsreich. Man findet hier alles fürs Frühstück, Mittag und Abendessen und auch kleine gesunde Snacks für Zwischendurch und Desserts. Auch die Getränke im Buch waren richtig klasse. Da sind Ideen dabei auf die ich nie gekommen wäre. Alle Rezepte sind gluten- und laktosefrei. Viele Rezepte eignen sich auch für andere Ernährungskonzepte wie Low-Carb, Vegan, Vegetarisch und Paleo. Ob das Gericht Vegan oder Vegetarisch ist, wird immer gleich anhand eines Symbols ersichtlich. Das finde ich sehr gut, auch wenn die beiden Ernährungsstile für mich keine Rolle spielen. Noch besser finde ich aber, dass bei den Symbolen manchmal ein * dran war. Das zeigte an, dass man eine Zutat einfach austauschen kann, um es vegan oder vegetarisch zu machen. Diese Austauschzutat wird dann natürlich auch genannt.

Neben den zwei bereits erwähnten Symbolen gibt es noch eines für Reinigung und eines für Darm. Das Buch empfiehlt nämlich drei Clean-Eatingkuren zur Entgiften, Darmsanierung und zum Energietanken. Zum einen das 21 Tage Clean Eating Programm, das 21 Tage Darmreinigungs-Programm und das 7 Tage Refresh-Programm. Die Rezepte zu den jeweiligen Programmen findet man dann anhand der Symbole und kann sie sich so seinen Speiseplan selbst zusammenstellen oder man nutzt die bereits vor angefertigten Pläne im Buch. Ich selbst habe diese Programme nicht ausprobiert und kann daher nicht viel dazu sagen.

Gut gefallen haben mir die vielen kleinen Informationen zu den Rezepten oder einzelnen Zutaten im Rezept. Da wird auf besondere Wirkung, gesundheitlichen Effekt, Nährstoffe und mehr erklärt. Manchmal gibt es aber auch nur persönliche Erlebnisse und Einschätzungen von den Autoren oder aber auch von den vielen Promis, die ihre Lieblingsrezepte beigesteuert haben. Dazu zählen unter anderem Orlando Bloom, Cameron Diaz und Gwyneth Paltrow. Für mich hätte es das nicht gebraucht, aber es ist auch ein netter Bonus.

Bei der Zubereitung gab es noch einen kleinen Mangel, den ich nennen muss. Die Zutaten werden zwar gut aufgelistet und mir gefiel, dass die einzelnen Komponenten (Beilagen, Salat, Saucen...) eine Gerichts auch jeweils eine extra Zutatenliste bekamen. Weniger gefallen hat mir aber, dass man wirklich immer auch die Zubereitungsanleitung lesen muss. Beim ersten Mal ist das ja noch okay, aber später erinnert man sich vielleicht nicht immer daran, dass man wirklich nochmal alles lesen sollte, um nichts zu vergessen. Das Problem war nämlich, dass in der Zutatenliste Wasser nie angegeben wurde, aber bei vielen Rezepten dazu gehörte. Ich bin ja eher der Zutatenliste-angucken-und-selbst-zusammenmisch-Typ und war dann schon etwas überrascht als es nicht so wurde. Erst der Blick in die genaue Zubereitungsanleitung öffnete mir dann die Augen. Naja aber davon abgesehen findet man hier einfach eine unschlagbare Auswahl an gesunden Rezepten. Viele davon habe ich auch noch nie in einem Kochbuch gesehen und ich habe schon sehr viele gelesen.

Geschmacklich ist gesund leider nicht immer lecker. (Zumindest für mich) Viele Rezepte sind auf Kokosbasis (Öl, Milch, Flocken oder Mehl) was mir ebenfalls nicht wirklich liegt und auch Mandelmehl kann mich nicht so begeistern. Da zwinge ich mich dann eher zu, weil es nicht viele Alternativen dazu gibt. Von den 7 Rezepten, die ich bisher ausprobiert habe, war eines für mich nach zwei Happen nicht mehr zum runterkriegen und 2 weitere fand ich okay. Aber es gab auch wirkliche Überraschungen und so werde ich die anderen 4 auf jeden Fall noch öfters zubereiten.


Die Sizilianische Clean-Eating-Pizza war mein größter Reinfall, aber das konnte ich mir schon denken. Ich hatte schon einmal ein Eiweißbrot aus Mandelmehl gebacken und das hab ich auch nicht runterbekommen. Hier ging es mir mit dem Pizzaboden aus Mandel- und Kokosmehl genauso. Meine beste Freundin freute sich aber über die Pizza und fand sie lecker. So unterschiedlich können Geschmäcker sein.

Mein Lieblingsrezept ist bisher "Fischstäbchen mit Sauce tartare". Hier wird zwar auch mit Mandel- und Kokosmehl gearbeitet, aber in der Kombination mit dem Fisch und der Sauce war es super lecker. Leider habe ich hier kein Foto gemacht. Ebenfalls ohne Foto aber ein echtes Highlight war der geröstete Blumenkohl mit Pistazien-Dip. Gerade der Dip ist auch für viele andere Gerichte geeignet. Ich esse ihn gern zu Garnelen.

Einfach, aber auch lecker war das Rote Beete Carpaccio mit Kräutersalat. Der Salat fehlt auf dem Bild, da ich das Carpaccio als Vorspeise serviert habe.

Da ich gerade Low-Carb mache, habe ich keines der Desserts bisher ausprobiert und kann daher nichts dazu sagen.

Trotz einiger kleiner Kritikpunkte hat mir das Buch sehr gut gefallen. Vor allem überzeugt es durch seine Vielfalt und vor allem der Vielzahl der Rezepte. Geschmacklich reichten meine bisherigen Erfahrungen von Nicht-Mein-Fall, über ganz-okay-für-ab-und-zu-mal bis hin zu Sehr-Lecker. das Buch ist für jeden zu empfehlen, der sich mit gesunder Ernährung beschäftigt bzw. beschäftigen will.

I had this out from the library so long that I finally bought the ebook. I don't plan to do the programs. I just want to incorporate more healthy, clean food into my daily diet. The more I do so, it turns out, the more I do so. I mean, it gets so easy to keep adding good habits it's inevitable. My body makes me like it. I went out to dinner last week & went back & forth between fish & chips & a more clean style meal. It was a little bit of a celebration, I've been so very good (making the clean choice on several similar occasions), & I (used to?) love fish & chips, so I went ahead with it. I actually thought I might enjoy the clean meal more & I did enjoy the fish & chips, which was fairly light for fried food, but it left me feeling a little heavy. Next time I know I'll pick the clean meal.

The book begins with an overview of clean eating and what types of ingredients you should use and why. It is a continuation of another book "Clean" but is good reference material to have locally here.

The recipes themselves are really good and will make you want to cook more. My only real criticism of the content is the lack of images and macro information as I care about how many calories a dish contains.

Tiene buen pinta, pero al llegar a las recetas te das cuenta de tres cosas.
1.- no vi en ningún lugar que esto esté avalado por algún estudio
2.- que los ingredientes son difíciles de conseguir
3.- que para ser un libro realmente de recetas es inverosímil que no contenga fotos de los platillos.
Por donde lo vea no lo puedo rescatar. Y esto es lo que pasa cuando te subes al tren de las dietas de moda y compras algo que recomendó una YouTube (mi culpa).

Underwhelmed

I thought Clean Eats was going to better than it was. I regret this purchase, as a significant amount of the book is extremely repetitive! My other point of contention is the amount of fake sugars in the recipes; could anyone really consider xylitol "clean?" I wouldn't recommend the book; just Google the recipes.

This book is a recipe book that accompanies the Clean book. This book has some good recipes that are easy to concoct and the ingredients are easy to find. Some other recipes are rare and a bit expensive and the ingredients are hard to find. Nevertheless I liked the book and I have used most of the ideas from it. They are taste and clean recipes.

Pretty much what you'd expect - eat whole nutrient dense food, no dairy, refined sugar, gluten. Some interesting recipes. Nothing new and I have read better more scientific explanations of the pros and cons of this approach.

I've made about a dozen recipes from this book and they have alll been really good as well as easy - that combo, plus that they are clean and healthy meals, makes this a great addition to any cookbook collection. The intro and instructions on how to eat clean are also very helpful.

Why you’d create a cookbook without pictures is beyond me. Additionally, a lot of the ingredients are obscure and would be hard to track down. I only found one recipe I was semi-interested in making.

An okay recipe book, not much on the health side of info, and way too much into their coconut oil for my taste, but some of the recipes are interesting and are reasonably easy to follow.

3.5 Stars --This book is 'GOOD'. It endorses Total Health, Fresh 'real-whole-food' recipes',
suggesting organic ingredients. Yet....I have some things to say. I'm going to take the time to say it with THIS REVIEW. (forgive me)

This is Dr. Alejandro Junger's 3rd book. It follows:
1) "Clean"
2) "Clean Gut"

I loved the title of the book 'Clean' and basic philosophy Junger teaches. He also happens to be 'charming'...handsome...a wonderful 'personality' ... [he shares his own health recovery in all his books] --
At present time, 'Junger' seems to be the new 'IT' doctor in the field of Integrative Holistic Medicine. We've had others. We've have a handful, (community), of these 'IT' holistic doctors now all working hard.

Many doctors, and Nutritionists have come before Junger. (which is why I like this books dedication: "To All Who Teach that Medicine is Food".

If you haven't noticed their is a movement in Holistic Medical Medicine --[A new term these days is Functional Medicine]. Many medical doctors are turning to 'Functional Medicine. (they can even get a degree in Functional Medicine: as in UN-LEARN years of things they were taught in medical school --and learn more about ROOT causes of illness and learn about how REAL whole-FOOD is our best MEDICINE ). Naturopaths practice Functional medicine also. But when a MEDICAL doctor in this country takes the plunge, and shift their practice to FUNCTIONAL -Integrative -medicine, their MD status sends them to the TOP OF THE LINE!

More and more 'Medical/Functional' doctors are going 'public': (Teaching online, selling products such as protein shakes, food bars, supplements, their books, their cleanse programs, and private coaching sessions. A large group of these doctors, nutritionists, chefs, and are collaborating. (People can now listen to dozens of these doctors from their home.

A few years ago, I was on the 'first' online 'weekly scheduled hour talks with leaders in the field of health (a collaborated summit) 'free-education' week with about 7 speakers: (Dr. Mark Hyman, JJ Virgin (nutritionist & fitness expert), Donna Gates, (wrote a book called "The Ecology diet" about re-building the immunity, etc.) I'm even 'published' myself in the Companion Cookbook by JJ Virgin. (who created a community 'clean' cookbook from her book 'The Virgin diet'.

These online SUMMITS are GROWING!!! They have more than tripled in numbers of health professionals joining in. Its starting to feel like a competition --and/ or at least a little overwhelming.
Community is wonderful --yet it can also feel a little nutty. So-- after reading-learning-listening --
remember --that even during a health revolution (our nation is being changed) --NONE of this is a competition. Its not a race. Healthy eating is not about being perfect -- (but our country did get into some problems) --so we can be thankful for the leaders in the field writing books, giving talks, teaching high quality solutions. ---but if we forget to have fun -- 'really' have fun ...be happy -healthy -and peaceful while 'on' our journey --(no matter where we each are) --then we are missing the boat.

What I love MOST about Junger is HIM. (he as a person) -- I like CLEAN: (a wonderful goal) >>> clean from pollution, clean water, clean air, wholesome, simple.

My complaints about THIS book:
1) The cover says "Clean Eats: 200 Delicious Recipes" by Alejandro Junger.
---BUT.....the bulk of the book are recipes by ***FRANK GIGLIO***. Why was his name not included on the cover? Would have been nice.

2) The book would have benefited with more visual pictures

3) Many of the recipes --(although good) --are found in other cookbooks I have.

I liked this cookbook. There are a lot of recipes in it that are simple and pleasant. The cookbook doesn't claim to be anything but clean eating. It isn't an autoimmune cookbook nor a Paleo cookbook which is nice for those that don't want to or don't need to eliminate those foods that are an issue for some of us.

I will need to acquire some mesquite meal. Never heard of it before. Sounds like it would be a nice seasoning.

The vast majority of this book is comprised of recipes (the title wasn't kidding). But the introductory material has some really good discussion on the nature of our relationship with food, and how it can be harmful or helpful to us.

While I likely won't follow anything in this book very strictly, it has certainly given me some good food for thought (haha I'm so funny). Plus, some of the recipes look preeeetty enticing.

I've only made a few of recipes from this cookbook, but so far, everything has been great not too complicated. It does require items I don't normally buy, so I do need to modify my shopping list. It will be worth it to eat healthier meals. I highly recommend the Mediterranean Rice Noodles, very easy and tasty.

I am clearly not enough of a foodie to fully appreciate the recipes in this book. But what I did appreciate was the beginning of the book, which fully explained clean eating, followed by the essays which thoroughly inspired me to follow through with clean eating. For the first time, I feel I have a strong grasp on what clean eating is and how to implement it in my life.

Some good advice on healthy eating and great looking recipes. Not enough information on the 21-day cleanse and gut cleanse, but a schedule of recipes is included for both. I guess I need to look at the author's previous books for more info.

More photos would be nice, but I especially appreciate his introductory primer to stocking a clean eats kitchen. Haven't tried any recipes but would recommend to patients looking for cleanse-friendly meal inspiration.

I got this book for the healthy recipes, but after reading, I'm pretty sure this isn't for me. I'm all for eating healthy, but I like my bread and cheese!

The Ground Mustard Chicken is great! But if you're using bone-in chicken, you really need to cook for 40 mins-an hour.
