Eye Opening! Definitely for those who want to elevate pastry skills to a high level! Ingredients and techniques I have never imagined are here. Does that mean the recipes are impossile to execute? No way! It is very doable but you need to look for special ingredients when needed. Not every recipe contains weird ingredients though. Thus this is exactly the purpose of this book: to up your pastry skills! The dishes are very creative.
I will update this review when I'm deeper into the book.
While this book contains great recipes, it's probably not the most practical for home bakers given the complexity of a lot of the recipes and the amount of baking kit you'll need. In terms of ingredients there are a lot of ingredients that you will need to source online rather than just down at the supermarket. Having said that, if you can manage it you're sure to wow with one of these desserts.
