This is a quite lengthy cook book, one that took me approximately 6 months to read.

This book is divided by days; that is, there are 365 entries, each one devoted to a breakfast, a lunch, and a dinner menu. Then for each day, the appropriate recipes are presented.

The recipes are well-written and clear. There are so many that I would make!

Examples:
Grapefruit en suprême with kirsch. Add to sliced grapefruit, for each person, a spoonful of powdered sugar and one pony of kirschwasser. Mix well and serve in suprême glasses.

Lorette salad. One-third field salad, one-third boiled celery root, and one-third pickled beets. Season with French dressing.

Canapé P. P. I. E. (Panama-Pacific International Exposition). Make some pieces of buttered toast. Put fresh caviar in the center and anchovies around the edge. Serve on napkins with quartered lemons and parsley in branches.

Shirred eggs, Metternich. Place two eggs in a buttered shirred egg dish with six canned mushrooms sliced very fine. Season with salt and pepper, sprinkle with grated cheese, place a small piece of butter on top, and bake.


I enjoyed reading this, despite the time it took.

The Hotel St. Francis Cook Book by Victor Hirtzler
Each chapter is broken up into a day of the year, the whole year has a different menu.
Preface talks about how the chef was familiar with the masters of Europe and the hotel where he worked.
Each days menu is laid out, breakfast lunch and dinner. Some recipes are included below the menu and brief explanation in how to make them.
Recipes don't tell you exactly how much to use of an item but gives you the ingredients to make them. Remember these are for a hotel where there could be hundreds eating every day.
So many fascinating creations I feel as if i am royalty just being able to see the menus and the recipes.
I know there are over 100 ways to prepare an egg, with pleats on the chefs hat, and so many of them are listed in this book.
What a find-awesome read can't wait to try a few.
Extensive Index is also enclosed at the end where each section has it's own index of recipes.
The Epicurean is also enclosed by Chas. Ranhofer, a listing of storerooms, pantries, beverage room, etc.

Interesting catalog of recipes and menus

Thousands of recipes for every day of the year help at the kitchen. Some very simple and others really elaborated.
