Thank you Dad for this book on making sausage. It has a lot of great information and I’m sure I will be referencing back to it often. It even has a section on jerky that looks very easy. Now I need to get my spices and get to work.

This book has so many recipes from all over the world. He gives good tips on getting the spices mixed in. A little dated when he talks about stores to buy a grinder and on prices. It just added to the fun of the book.

Had a wonderful and fun sausage making class with Mr. Perdida in the 8Os in Santa Cruz California
A brilliant class. This book has become the go to for all our sausage and jerky making for our family since then. He was a wonderful guy and his help for others in making craft and authentic sausage is his great legacy. This book is used often have made over 20 of his gems

Whilst not as encyclopedic as "Great Sausage Recipes and Curing Meat" by Rytec Kutas, it is only about 200 pages but packed with great stuff.
