Over the past few months, I have been searching for cookbooks to go on my shelf. Specifically baking books that help in the breakdown of recipes and ingredients. I have worked in bakeries, in restaurants as a baker, and at-home baker, and I wanted a book to assist with my breakdowns of recipes.
I am so happy that I found this book. This cookbook will definitely be added to my shelves!

Favorites:
How the book is set up. I love the ten lessons breakdown! They are great for beginners and bakers who have been at it for years. I love that I can decide which lesson I want to follow that day, and then I can find a recipe based on that lesson.
Pictures. These pictures are beautiful and clear. I also love that the pictures for each lesson coordinate throughout all ten.
Conversions. It is very convenient when conversions are in cookbooks. They are essential for customers like me, who are in the U.S. while the author is from Australia.
I appreciate the “home-baker” focus. The author kept the customer focused while writing all the tips, tricks, and stories.

Thank you to Quarto Publishing Group – Chartwell Books and Netgalley for an eARC of this book to read and review.

Anyone who loves to bake will want to immediately pick up a copy Bake Class Step by Step: Recipes for Sweet and Savory Breads, Cakes, Cookies and Desserts. The book is written by celebrated Australian author, Anneka Manning, who has written several cookbooks, and has been featured on television and taught baking classes for years.

Each chapter begins with step-by-step instructions and photographs on different baking methods (such as The folding In method, The Measure and Mix method, The Rubbing In method, The Creaming Method, and others) and is followed by recipes using those methods.

The author has headed each recipe with comments and helpful hints, which are followed by a list of ingredients, then easy-to-follow instructions. The recipes can be easily followed by beginning bakers, as well as those with a bit more experience. The cookbook includes dozens of mouthwatering recipes for both sweet and savory baked goods, that turn out picture perfect.

Most (unfortunately not all) of the recipes are accompanied by beautiful, professional photographs, which make this cookbook very appealing. The variety of recipes have a definite Australian influence, and there are enough fabulous recipes to keep bakers busy for months. Manning knows her stuff, and knows how to present it in a way that everyone will be able to learn from her expertise.

Special thanks to NetGalley for supplying a review copy of this book.

I received an eARC of this book from NetGalley and the publisher, for which I thank them.

Let me start with the positives about “Bake Class Step by Step” by Anneka Manning. First - lots of step-by-step photos for how to do the different mixing techniques. The photos are also large for the baked goods. Also, since I prefer using metric measurements, I was pleased to see those in addition to US cups. I also really liked the section regarding different ingredients, especially since this is an OZ-based author. However, I was a tad confused because Ms. Manning listed out various different sugars, but one of her recipes refers to “raw sugar,” which was not mentioned in her list of sugars. While there are many photos, I so prefer seeing a photo of EVERY recipe in a book for reference; though, yes, it makes for a thicker (and costlier) book. As for cutting cookies from a log, I wish there’d been additional instruction on that as for some reason that’s the one thing I always manage to squash or have crumble. I was a little disappointed that one of the sections was about using food processors; not having one, I found that section to be the least helpful - especially since it’s quite easy to have included something for how to make the recipes if one doesn’t have a processor. I do wish that there’d been additional tips for beginning bakers - including how to make your own self-raising flour and the proper temperature to cook breads to opposed to “bake until it sounds hollow when tapped.” I did earmark some recipes to try at a later date as they looked promising. Looking over Ms. Manning’s criteria for good cookbooks, I must agree with all of them - knowing the complete time to complete a recipe (baking + rest + cooling) is important. I did find this book to be very UK/OZ based, but that’s to be expected. I think the addition of QR codes linking to videos with voice overs for the different sections' instructions would’ve been a snazzy addition. I think if one wants to use this as a general baking reference book, it would be fine.

NOTE (29 AUG): I made the Cinnamon & Orange Carrot Cake recipe from this book. There is about a pound (500g) of carrots in this recipe. The cake itself is less sweet than Americans typically prefer, but it's moist. The frosting is sweet enough to balance the lack of sweetness in the cake. The recipe was fine, but I'd have to modify it a little to suit my own taste.

I, like many, enjoy baking shows but, in no way, consider myself a baker. This book will definitely help me to become one.

I like many things about this title. There are many photos to guide the baker and the directions are clear. The organization of this book is unique and helpful. Chapters have headings like:

The Measure & Mix Method

The Creaming Method

The Whisking Egg Whites Method

The Kneading Method (and so on)

Recipes follow each of these methods so that bakers can learn them.

Begin by reading the Before You Bake section. It is helpful. Then make anything from Pound Cake to Chocolate Macadamia & Orange Tart and much more.

Highly recommended for those who are learning and other bakers who may enjoy these recipes.

Many thanks to NetGalley and Quarto Publishing Group for this title. All opinions are my own.

This is one of those invaluable cookbooks that are used for generations by anyone wanting to learn how to successfully bake. Ms. Manning shows you step2 by step instructions with pictures on how to correctly nix and prepare the ingredients in varying styles.. At the beginning of the book, she teaches you about different ingredients and how to choose the correct one for your recipe.,and how to store it. I have learned so much with this cookbook. There are some fabulous recipes in here that I cannot wait to try out over the coming weeks. I love that she has also included gluten free recipes, as I would love to confidently bake for my celiac friends. I received an electronic advance release copy of this book for my honest opinion. When it releases,I will purchase it in hardcover for my ease of reference. This would make a great gift for those who like to experiment in the kitchen.

Really enjoyed previewing this cookbook. Thanks to NetGalley and Chartwell books for the ARC to read and review. Expected publication date 11/7/23 I like many readers am intimidated by baking. This book provides a system that I believe I can use to become a better baker. I love how the author breaks down the process and offers some delectable looking recipes to progress along a pathway to increasing one's baking skills! The photographs are enticing and the variety of recipes is wonderful. I found this book very inspiring and more doable than most baking books. I particularly appreciated the introduction with its thorough discussion of ingredients, baking tools and other tips. The beginner recipes are great and one ends up with a beautifully impressive bake. This is a book that I definitely plan to add to my own collection upon publication!

The book has two parts, the first one is before you bake and the second one is divided into 10 lessons. The lessons include different methods like mixing, beating, folding, using food processor, creaming, rubbing, etc. Each lesson discusses the how-to of the method (with many pictures!) and includes recipes in which you will practice said method. The number of recipes varies per method, the lowest amount of recipes per method was 5 and the highest amount was 15. Almost all of the recipes have pictures. This is a great book to have as a baker since it discusses many methods and the photography is excellent.

Thank you NetGalley and Chartwell Books for providing me with an ARC of this book.

Real lessons in baking...

bake class is a handy baking tool for beginners and intermediate bakers.
With the lessons broken down into categories by the primary baking method used, it makes logical sense. With easy recipes for all ages and abilities, the main measurements are in grams, with cups for most everyday American bakers. I appreciated that both sweet and savory lessons are in this book and the methods work their way up to a bit more complex methods as the book progresses. It takes you on an baking journey, step by step.
Recommend.

This is an all around solid cook book for baking. It meets the needs of new bakers as well as those with more experience. Not only are the recipes well photographed, they are well explained. In addition, the book has ten basic lessons for bakers that I found helpful and I'm not even a newbie. Couple that with the yummy recipes and this book's a total winner.

I thought it was neat how this book was broken into section by technique versus ingredients. Learn one technique and here are the x number of recipes that use that technique. Also the recipes are very unique. Not your average cookies and cakes baking cookbook.

Bake Class Step by Step by Anneka Manning is such a resourceful guide! With the abundance of cookbooks and guides available today, it is hard to find one that stands out from the rest. I feel like this one does. I loved the instructions for ten different methods to baking. I have been baking for a while, but never received instruction quite like this for several of those methods. The provided recipes are a bonus, but the photographs are a genuine bonus. The descriptions are easy to follow along and help instill confidence and know-how for new techniques. Anneka’s warm and friendly approach made me feel like I was sitting down with a friend in the kitchen. I absolutely recommend this outstanding guide for all kitchen libraries!
I received a complimentary copy from the publisher via NetGalley and all opinions expressed are solely own, freely given.
