Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.
Note: WorldCat is an excellent resource for finding author information and contents of anthologies.
The biggest problem with this book is the fact that it skips over some major events and gives space to events of lesser importance. The first 20,000 years of french history (and pre-history) are crammed into the first half, and the past 150 years are all the rest. The battle of Bir Hakeim gets a whole chapter and the reign of Louie IX gets literally nothing (despite the fact that it was long, interesting, and important).
It's also peppered with advertisements for other books, which is annoying.
It also seems a bit sloppy (eg confusing Jean sans Peur with Jean sans Terre), and its organization is uneven. It sometimes artlessly jumps from one thing to another.
But if you want to learn some French history while learning the French language, this book will do the job at a fairly basic level for both.
