Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

Some days deserve 10 stars but there are enough days that tank the volume for me. There are other better options for daily readings. To be clear, this is mostly a great book but it’s like a book with a chapter to tell people to skip when you recommend it. In this case there isn’t an easy way to manage that.
This daily devotional book includes a wide selection of authors from various branches of Christianity and some from outside it (e.g., an ancient historian or two). It's great for someone seeking a taste of sermons, literature, essays, creeds, and meditations from Christians throughout the centuries. It represents conservative and liberal streams, Apostles, Church Fathers, pastors, theologians, thinkers, and other voices. Indexes and a list of references in the back provide options for reading and more information about the selections; but more detailed references would have made this book better for readers wanting to dig deeper into the cited works.
