Skipped all the meat mains (what's the point, we've got protein in the beans). Skipped the pressure cooker chapter as I don't have one. Skimmed most of the rest. Not much interesting.

Barley stuffed peppers (they said eggplant, but I was tired and read it as peppers and so that's what I'll try)
Mollettes - like a Mexican bruschetta. Sounds interesting, but even more so it inspires me to use refried beans instead of red sauce next time I make pizza (and of course top it with TexMex compatible stuff like pico de gallo, shredded lettuce, queso fresco, black olives...).

As per usual, all the tips and tricks that the Test Kitchen provides are fantastic, but the recipes didn't inspire me.

In my opinion and experience with these recipes, the authors of this book did not test these recipes in the kitchen. Trying to make some of the recipes there are numerous mistakes of measurements for example one ounce of Parmesan cheese does not equal one cup. 1/3 a cup of grapes is not 3 ounces. Go ahead try it - try and measure it. It doesn’t work.. Why do I need 5 cups of salted water to cook one cup of Farro? Why do I need 5 cups of water to cook one cup of polenta when directions on the bag indicate 3 cups. Just so many mistakes. ATK You have disappointed me.

A bit of a disappointing entry from ATK. The pictures were lacking, when compared to previous publications, and the recipes felt as though they were missing something. Hopefully this is just brief slump for an otherwise powerhouse when it comes to cookbooks.

Very good recipes. I appreciate the science behind every thing..like a Alton Brown. Yet many of the recipes didn't have spice. I had to add heat. Definitely provided ideas.

Atk makes good cookbooks and this is one of them. As much as I thought I knew about rice and beans this book taught me quite a bit and expanded my repertoire. Lots of great recipes.
