This book has lots of good information, but it still doesn't cover things like what to do if your pralines don't get hard or if your fudge is too hard. It does have answers to 10 problems encountered by candy makers toward the back, but being a book for "dummies", I expected it to explain common mistakes make by beginning candy makers.

Many of the tips and suggestions I was happy to realize I was already familiar with. There were some other helpful pieces of information. I was hoping for a few more recipes because one can never have too many candy recipes!!

Fun book to introduce yourself to the basics of candy making. But all the ingredients and instruments I didn't have when I first read it, kinda put me off. I managed to make yummy toffee though.
Might check it out again now that I have (and know how to use) a candy thermometer.

Might have been useful back in 1923. Now it brings nothing new over a google search. It says nothing about sugar replacements. It simply lacks too many things.
