I LOVE this book for baking with children. Eggless recipes have two benefits for all kids:
1. there is no limit to how much you can reduce the recipe. If you want to make 1 dozen cookies instead of 4, no problem. This is great because I like to bake often with kids, but I don't want to produce a week's worth of sugary treats every time I do.
2. there is no concern about salmonella. They can eat the dough raw and you don't have to worry that they might lick their fingers or touch something before you can wash them.
Although I disagree with some of the techniques used in these recipes (I think her mixing times are too long and that you get better loft if you mix wet and dry separately and then combine quickly) we haven't been disappointed with anything we've tried. Blueberry breads, lemon poppyseed cake, even chocolate chip cookies. It's all good!
I love this book. It's a life saver. My son is allergic to eggs and I use this book all the time. Honestly the sour cream chocolate cake is the best cake you'll ever make! I make it for everything and everyone loves it. Even people who can eat eggs.
