None of us are as young as we once were. For decades, I had low blood pressure. I wasn’t a big one for salt, ate plenty of salad and vegetables, and I was always cold. Unfortunately, just a few weeks ago, I was diagnosed with high blood pressure and prescribed medication for it.
With that prescription came an admonition: Eat even less salt, less than 2,000 milligrams of sodium per day. Wowzer! How do I do that?
Fortunately, the father-son writing duo of David C. and Thomas D. Anderson have done the hard work in finding ways to drastically reduce sodium in one’s diet. From making their own mayonnaise and steak sauce to marinades to bean salads to Salmon in a Basil Butter Sauce to Balsamic Glazed Chicken to Pork Vindaloo and much, much more, the Andersons provide some great low-sodium recipes! Even low-sodium muffins, pancakes, salt-free Pickled Cucumber Salad and Chinese food, which are usually loaded with sodium-laden baking powder or MSG and soy sauce! For those feeling salt-deprived, this cookbook is a treasure!
My doctor suggested that I try to reduce the amount of salt in my diet. As someone who generally doesn't use salt at the table, I know that the majority of the sodium in my diet comes from other food sources. What I like about this cookbook is that it gives plenty of suggestions for substitutions for salt within recipes and also explains why some foods that many people believe can not be made without salt actually can be. Basically, it is about retraining our taste buds to not want the salt so much. A lot of the recipes sound pretty good and seem like they would be easy to make and I plan to try some soon.
A cookbook designed for those of us who want to or need to reduce their sodium intake. There are over 250 easy to follow recipes from the beginning to the dessert.
The recipes in this book are great. Lots of everyday foods with everyday ingredients. I first read a library copy and then purchased because it is so good.
